If you've been told that unprocessed salt is not to be included in The Paleo Diet, I would offer that much of humanity has lived close to the sea and that salt was one of the first sources of trade for those living inland. Unprocessed salt is an important part of our diet and should only be restricted when combating a renal condition. I suggest using pink rock or grey sea salt, which gives you as many as 60 trace minerals, in addition to sodium. The author is a recovering vegan and in the first half of the book recounts his dietary experiences using some paleo foods to restore his health. Grains and legumes (or pulses) are other groups that are frowned upon in the diet. "The right grains in the right amount can actually curtail inflammation," says Bonnie Taub-Dix, MA, RD, CDN, creator of the blog Better Than Dieting and author of Read It Before You Eat It: Taking You From Label To Table. In addition, fiber-rich legumes, including beans, lentils, and peas, have been consistently linked with reduced risk of obesity and chronic disease. "Fiber-rich carbs can supply energy, fiber, a host of vitamins and minerals, and a soothing satisfaction that could keep us from eating less nutritionally dense choices," Taub-Dix says. With the rise in popularity of ancient grains such as amaranth, millet, oats, and teff, and pulses, such as chickpeas and lentils, there's much opportunity to access versatile, naturally delicious whole grains and legumes that our ancestors ate. The paleo diet runs on the same foods our hunter-gather ancestors supposedly ate: fruits, vegetables, meats, seafood, and nuts. "By following these nutritional guidelines, we put our diet more in line with the evolutionary pressures that shaped our current genetics, which in turn positively influences health and well being," says Loren Cordain, PhD, professor of health and exercise science at Colorado State University and author of The Paleo Diet. He says the diet lessens the body's glycemic load, has a healthy ratio of saturated-to-unsaturated fatty acids, increases vitamin and nutrient consumption, and contains an optimal balance of protein, fat, and carbohydrates.
Most Paleo dieters of today do none of this, with the exception of occasional hunting trips or a little urban foraging. Instead, their diet is largely defined by what they do not do: most do not eat dairy or processed grains of any kind, because humans did not invent such foods until after the Paleolithic; peanuts, lentils, beans, peas and other legumes are off the menu, but nuts are okay; meat is consumed in large quantities, often cooked in animal fat of some kind; Paleo dieters sometimes eat fruit and often devour vegetables; and processed sugars are prohibited, but a little honey now and then is fine.
Autoimmunity is a process in which our bodies own immune system attacks “us.” Normally the immune system protects us from bacterial, viral, and parasitic infections. The immune system identifies a foreign invader, attacks it, and ideally clears the infection. A good analogy for autoimmunity is the case of tissue rejection after organ donation. If someone requires a new heart, lung kidney or liver due to disease or injury, a donor organ may be an option. The first step in this process is trying to find a tissue “match”. All of us have molecules in our tissues that our immune system uses to recognize self from non-self. If a donated organ is not close enough to the recipient in tissue type the immune system will attack and destroy the organ. In autoimmunity, a similar process occurs in that an individuals own tissue is confused as something foreign and the immune system attacks this “mislabeled” tissue. Common forms of autoimmunity include Multiple Sclerosis, Rheumatoid Arthritis, Lupus, and Vitiligo to name only a tiny fraction of autoimmune diseases. Elements of autoimmunity are likely at play in conditions as seemingly unrelated as Schizophrenia, infertility, and various forms of cancer.
Cordain admits that meat leads to plaque and increases cholesterol where plants wouldn’t. And science establishes that plaque and cholesterol lead to heart attacks and strokes. But Cordain argues that plaque alone is insufficient to cause harm. Rather, it is plaque combined with inflammation that causes heart attacks and strokes. So avoid acid, salt, legumes, wheat, starchy vegetables, dairy, oil, fatty meats, and grains because they cause inflammation. But if both science and Cordain agree that plaque is a necessary part of the heart-disease equation—and that meat causes plaque—why should we follow Paleo rather than just forgo meat?

Alcohol is a no-no if you are strict paleo. Beer is made from grains, and liquor also contains traces of gluten. The digestive abilities of anatomically modern humans, however, are different from those of Paleolithic humans, which undermines the diet's core premise. During the 2.6-million-year-long Paleolithic era, the highly variable climate and worldwide spread of human populations meant that humans were, by necessity, nutritionally adaptable. Supporters of the diet mistakenly presuppose that human digestion has remained essentially unchanged over time.
For the most part, my eats are “clean.” For me, that means generally following the rules of the Whole30®. The Whole30 is a nutritional reset that gets you back to a clean dietary slate: Eliminate all grains, legumes, dairy, sugar, and chemically processed vegetable and seed oils from your diet for a month. Once a baseline of health is established, slowly reintroduce some of these foods (like dairy, white rice, and dark chocolate—not hyper-processed junk foods!) one at a time to see where you sit on the spectrum of food tolerance. As some of you know, I worked for Laura Fuentes at MOMables last summer. I like to say she gave me the “Blogging for Dummies” course. She had it down, but she needed an intern and I wanted to learn. It was such a fun experience, and now whenever I’m in town I must visit for Bulletproof Coffee or a Paleo treat together. We both love healthy food, blogging, and coffee. A lot.
For example, although white potatoes were recorded as being available during the Paleolithic era, they are usually avoided on the Paleo diet because of their high glycemic index. Processed foods are also technically off limits due to an emphasis on fresh foods, but some Paleo diets allow frozen fruits and vegetables because the freezing process preserves most nutrients.
As paleo guru Robb Wolf puts it, think of a 100-yard football field. The first 99.5 yards are how long Homo-Sapiens spent as hunter-gatherers. As they became REALLY good at hunting and gathering our bodies adapted to that lifestyle over thousands of years. That last half-yard represents our species after the agricultural revolution, where our diet has shifted (but our genetics haven’t).

Physicians, biochemists, nutritionists, and other researchers are starting to come around to the benefits of ancestral nutrition, and people who adopt a Paleo-like approach to eating are reporting significant improvements in their general health, body composition, and energy levels. 4. Raw food is for the birds (too much of it, anyway). There’s paleo, and then there’s the raw diet. Folks who eat raw tout the health benefits of the approach, saying that they’re accessing the full, complete nutrients available because they’re not heating, and thus destroying, their dinner. But that’s simply wrong. We cook to get our hands on more nutrients, not fewer. According to Wrangham, the one thing absolutely all cultures have in common is that they cook their food. He points out that women who move towards 100 percent raw diets often stop ovulating, because even if in theory they’re tossing sufficient food into the blender to fulfill their caloric needs, they simply can’t absorb enough from the uncooked food.
