These are delicious!! I’ve made a similar recipe that used almond flour instead of almond butter, and they were pretty good, but these are way better, especially the texture. I had no problem with them burning or being gooey in the middle. The only alteration I made was I added a little bit of pure vanilla extract & a little bit of cinnamon. My new go-to breakfast! Chicken parmesan is not something that you would typically be having on Paleo because it is coated in bread crumbs. But this chicken parm is coated with Parmesan cheese and almond flour, which replaces the bread crumbs. You’ll still get that classic crunchy outer covering on the chicken, and of course the Parmesan will be baked right onto the chicken, so it’s just a matter of getting the other ingredients right. For the tomato sauce they are using garlic, oregano, and olive oil, and you can top it off with basil leaves and optional mozzarella cheese.

FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! Made them today, with a few changes. I used about 1/2 cup pumpkin for the bananas, added a little maple syrup, vanilla extract, and pumpkin pie spice. Used my ebelskiver pan (love that thing) and put some apple butter in the middle of some of them. YUM! And yes, it’s 80 degrees out here, but pumpkin is my weakness. These sweet potato chips do a great job of filling in for regular potato chips. They have the same texture you’re looking for, both as you pick them up and once you put them in your mouth. The sea salt ensures that they’re salty enough to satisfy, and the rosemary gives them a distinct flavor that really plays well with the sweet potato. I only used one banana, one egg, and scraped the bottom of my natural almond butter, a dash of cinnamon, and they were great. I would make the full size if I was feeding my husband too but I just wanted to say that if you want to make just enough for yourself it still works great. If you want to try a Japanese-style burger without traveling to Japan, this is your ticket. They’re using organic grass-fed ground beef from Trader Joe’s, an excellent way to start off any burger recipe. From there they add onion, garlic, an egg, and some seasoning to get these just right.
