Hey Tessa! Good question. So after calculating from my credit card, I spend about $275 on average on food without really budgeting. I stick to eggs and chicken as my main form of protein and look for when grassfed beef is on sale. Even at $7 a pound I can get about 3 meals out of that, so it’s not too bad. I’ve tried making paleo pancakes before with okay results, but this recipe is fantastic! These pancakes taste and look like white-flour pancakes. Absolutely the best chicken ever, even the breast meat was moist! It's the only way I'll cook a whole chicken again. Simple, easy, quick, no mess - perfect every time. I've used both stainless steel and cast iron pans. great and easy technique for “roasted” chicken. I will say there were no pan juices, just fat in the skillet. Will add to the recipe rotation. Good for family and company dinners too. I've done this using a rimmed sheet pan instead of a skillet and put veggies and potatoes around the chicken for a one-pan meal. Broccoli gets nicely browned and yummy!

Hey Amanda, I’d love to try this as well. I’m not sure if they will freeze well, but I don’t see why not. I think freezing the chicken salad would be smarter, and taking that out on a Sunday and just packing those up for the week and storing in the fridge may be better. The wraps probably don’t freeze well. But for most of my once a month cooking, it always requires a bit of assembling the week of! Does that make sense?

Remove the meat from the marinade and lay it out on your counter on top of some paper towels. The goal is to get it as dry as possible. Lay paper towel over top and pat it dry. Now’s the time to put it into your dehydrator or oven. You can thread the meat onto wooden skewers (near one end of each piece) and lay the skewers perpendicular to the oven wrack’s bars (use the top shelf). Make sure the meat hangs down. Place cooking sheets lined in foil beneath the meat to catch any drips.

If you thought pulled pork sliders were off the menu, you were wrong. You just have to find creative workarounds when you are making Paleo recipes. In this case they’ve replaced hamburger buns with sliced sweet potato, which gets the wheat out. They haven’t skimped on the pulled pork which is going to taste just like you’d expect it to if you ordered a pulled pork sandwich from a barbecue joint. Creativity is one of the main and factors when you are eating Paleo because nothing is really off limits, you just have to figure out how you can have it.
I used a heaping spoonful of crunchy peanut butter and a small banana (about half a normal banana) with an egg and cinnamon. I mashed it up with a spoon in a bowl and put it on a heated nonstick pan with butter on it. I used a small, thin pan over the lowest setting on the smallest gas burner we have. No problems with burning, sticking, or flipping here. They were dense, thin, and tasted like fried peanut butter! My picky non-paleo man seemed to enjoy them with his nutella. They started breaking apart when I added some shredded coconut. I think I’ll add more egg or egg white next time or maybe some baking powder to make them fluffier. Possibly baking would be better.
