*Sometimes instead of regular guacamole, I’ll make “guacachoke dip”, which is this: take a large can of artichoke hearts, an avocado, a quarter cup of lime juice, a pinch of cumin, and a pinch of chile powder and mix it up in a blender or food processor. Perfect pancakes should be fluffy, tender, lightly sweet, and simple to make. For a paleo recipe that would stand up to its traditional counterparts, we started by choosing the flours that would be the base of our recipe. We knew from previous testing that a combination of almond and arrowroot flours would give our pancakes volume and structure; we determined that a 5:1 ratio of almond to arrowroot worked best.
Baking powder, on the other hand, typically contains cornstarch, which isn’t appropriate for a Paleo diet. If you can’t purchase Paleo baking powder, made with an appropriate starch, it’s so easy to make yourself with 1 part baking soda, 2 parts cream of tartar and 1/2 part arrowroot or tapioca starch/flour. If you aren’t that strict, though, just use “regular” gluten free baking powder. I won’t tell.
Even when you’re full keto, sometimes you just want a stack of fluffy pancakes, smothered in butter (organic, grass-fed butter, of course). I think granola bars are pretty healthy so my kids and I eat them for snacks all the time. They aren’t just for breakfast anymore. These granola bars come together quickly and are so easy to make. Chopping the nuts is the most time-consuming part and you probably know that isn’t very hard. You can use whatever nuts you like or have on hand. You can forget the chocolate if you’d like.

Thank you for posting this! I have been practicing the paleo diet on and off for a few months and getting little cravings in between is hard because I know I can’t eat junk. This saves a lot of time and energy and I feel better knowing there are fun and easy paleo snacks to make without breaking your diet! Nina, how much cinnamon do you use for your pancakes? I have tried banana pancakes, with just 2 eggs, a banana and then some cinnamon and vanilla, but….I find seems like the banana tends to overpower things a bit, not sure if I’m not used to or not or if using an organic one would make a difference, but it’s a little bit of an adjustment. She spit them out because she said they had a”sour” taste. I didn’t notice at first but when I went back and tasted, there was a very distinct bitter note on the finish of these pancakes. Once I noticed it, it stood out big time. Any ideas on this flavor? I was thinking it was the tapioca starch as we are new to this ingredient and seemed to be the only culprit. It is from Bob’s red Mill.
Just finished up my first Whole30 and made these as a celebratory Day 31 dinner. Both my husband and I were amazed how great they were. They were a little tricky to flip but I got the hang of it after awhile. They are extremely filling and really don’t require any topping because they are moist and plenty sweet with the bananas. I think they were actually twice as good when eating left overs the following morning. I’m considering making a few batches and freezing them for easy quick breakfasts!

As some of you know, I worked for Laura Fuentes at MOMables last summer. I like to say she gave me the “Blogging for Dummies” course. She had it down, but she needed an intern and I wanted to learn. It was such a fun experience, and now whenever I’m in town I must visit for Bulletproof Coffee or a Paleo treat together. We both love healthy food, blogging, and coffee. A lot. 
If you’re craving toast or bread, you probably need more nitrogen. You can get that from high protein meats and fish. Don’t think of meat as a “snack”? Make some jerky. Even if you don’t have a dehydrator you can still make jerky. All you need to make jerky is a bit of time, some mild heat, and a dry environment. If you’ve been buying jerky, save yourself some loads of cash and make it yourself!

Pumpkin seeds are one of the healthiest seeds you can eat, and making them taste as good as they can means you’ll be more inclined to eat them, and therefore more likely to benefit from the nutrients they contain. This recipe uses real jalapenos to deliver the heat, and keeps things elegant by only using the requisite number of ingredients to get these to taste right. For example, there’s olive oil, which is used to help roast the seeds, but it also helps the paprika and salt stick to the seeds so you get flavor on each one.
These are excellent. My sister is eating Paleo and loves them. I love them because my husband and I are diabetic and these are very low in carbs. They have a nice banana-bread flavor and are so easy to make and keep quite well. I am going to add some cinnamon and nutmeg to them to see how enhancing that flavor impacts it. I might also add some finely chopped walnuts for the same reason.
This recipe does its best to replicate the chocolate Hostess brand donuts, but in a way that gets rid of the lousy ingredients and replaces them with wholesome ones. They contain wonderful things like medjool dates, eggs, and coconut flour, rather than what you’ll find in a package of Hostess donettes. The main ingredient in those is sugar, followed by partially hydrogenated vegetable oil which provides trans fat, and wheat flour. One other thing to note here is that I pre-make some of these ingredients, which takes time, but at least it’s not taking time in the middle of the day when I’m trying to work or rush out the door.
