I made these this weekend. They were great. I added some sliced strawberries to top them and in between the short stack of pancakes. Delicious! My wife loved the flavor, but found the texture to be a little odd.I am thinking about adding a 1/4 cup of almond flour to give them a boost in the texture department. I’m not always a huge fan of buying Paleo products, but 1) these are only made of coconut, so they’re super healthy and 2) these are SO good and will give you so many new options for lunch. After you buy the wraps, make the chicken salad and use a Paleo mayo recipe. Do not get lazy about the Paleo mayo and buy store-bought; the Paleo mayo is much better. These apple chips will do a good job of satisfying your need for something crunchy, as well as something sweet. They’re baked, not fried, so right off the bat you’re coming out ahead than if you were to eat an ordinary chip. These are apples and not potatoes so you’re avoiding eating potatoes, one of the foods not allowed on Paleo. The ingredients list contains just two items, apples and cinnamon, so this recipe is as pure as it gets, especially if you’re using organic apples, like you’re supposed to.
Just tried this recipe for the first time. It was fantastic!! Even my non-paleo American boyfriend loved them! I’m pretty new to Paleo and have decided not to give up drinking and just drink vodka lime sodas if there is a social occasion. Yes, I did it right. Only 3 ingredients. Are you like some people and just pass up plantains in the grocery store? I used to be like that. I didn’t even know what they were. They looked weird and terrible. I don’t think like that anymore since I’ve gotten to know them. You can either choose them when they are on the yellow side or the green color side. The only difference is that the yellow ones are riper and therefore sweeter. The green ones are less ripe and won’t taste as sweet. That choice is just up to your preference. The yellow ones are a little harder to work with because they are more sticky. I do recommend green but you should experiment and have fun. Don’t worry about the skin being brown and a little bruised. The skin on plantains is really thick so the fruit is more protected than with a banana. https://www.youtube.com/watch?v=urGzfAW70PY
These little sandwiches are really pushing the limits of a conventional sandwich. Bacon is serving as the “bread” and guacamole is the thing getting sandwiched. Avocados are bona fide superfood, and contain plenty of potassium, fiber, and healthy fat. Bacon is often the scourge of most diet plans, but on Paleo it is allowed so why not dig in? The two go really well together, and you’ll often find them as add-ons to deli sandwiches because they simply taste that good.

This uses Greek yogurt, which is a fermented form of dairy and considered acceptable by some following the Paleo plan.
