The oven is faster but necessarily better. Just turn it on the lowest heat possible. I put links to two different dehydrators because one is way more affordable than the other. I have the cheap one and it works fine. But if you think you might use it a lot it might be worth the investment to get the more expensive one. I just made these for my 3 kids and they gobbled them up! I added chocolate chips and made the pancakes about 2 inches in diameter. They were a bit difficult to flip and turned brown quickly, but they still tasted great. We did use a little maple syrup but didn’t use nearly as much as we have with regular pancake mix. I loved that this is a high-nutrient, kid-friendly breakfast. Do you have any suggestions for subbing the coconut flour with a different (nut-free) flour? My daughter could taste the coconut so I’d like to try a different flour next time.

So about the recipe… You have to buy the Paleo wraps online or if you’re from my area (Mandeville, Louisiana), my friend at Vive sells them. I’m not always a huge fan of buying Paleo products, but 1) these are only made of coconut, so they’re super healthy and 2) these are SO good and will give you so many new options for lunch. After you buy the wraps, make the chicken salad and use a Paleo mayo recipe. Do not get lazy about the Paleo mayo and buy store-bought; the Paleo mayo is much better. Kirsty, with animal protein I’m a pretty picky. I buy at butchers where I trust in the quality. In my opinion there is a huge difference in taste and quality when it comes to animal protein. Grains and veggies I’m more lenient but never with animal protein. The cheapest way to get high quality meat is share a whole animal with friends or neighbors. The bacon we eat is from a pig I share with another 2 families. Once a year I get 1/3 and freeze it all. The bacon is incomparable to any grocery store bacon. I’d rather it less often.

These did taste amazing, however I am one of those that cannot get these to stay together to flip them. If I waited long enough to flip without it being a scrambled mess, they were black. Should I try a lower heated skillet for a longer time? Or possibly I am not using enough oil in my skillet? My husband and I both ate them….even scrambled they tasted wonderful. Absolutely the best chicken ever, even the breast meat was moist! It's the only way I'll cook a whole chicken again. Simple, easy, quick, no mess - perfect every time. I've used both stainless steel and cast iron pans. great and easy technique for “roasted” chicken. I will say there were no pan juices, just fat in the skillet. Will add to the recipe rotation. Good for family and company dinners too. I've done this using a rimmed sheet pan instead of a skillet and put veggies and potatoes around the chicken for a one-pan meal.
