My FAVOURITE paleo pancake recipe ever! During a paleo challenge in September last year, a very similar recipe was posted on our group page. They were delicious and they have become a common weekend breakfast for me. In fact, I was having them so often, I had to force myself to have a break from them! Absolutely amazing! I love your recipes and this one will definitely be a staple for a family weekend breakfast. I have made this recipe using tapioca flour and today, with arrowroot flower. My preference is arrowroot flower. Tapioca flour has it’s place in some recipes but it can lead to a gummy texture, mainly in the middle of whatever it is I’m making. Arrowroot flour made these taste just like the real thing. My husband, who would put extra gluten on food (his running joke) was convinced these were the real thing. I think I’ll start using arrowroot flour for all of my recipes that call for tapioca. Ashley, do they always interchange so well? Thank you for your amazing recipes!
One strong suggestion… if you’re against using a non-stick pan or griddle… I HIGHLY recommend this steel crepe pan. I don’t know how I’ve gone without it in my kitchen. It’s one of the best purchases I’ve made (right up there with my Instant Pot) and the crepe pan is super affordable. Season it really well just once and you’ve got what’s basically non-stick steel. Blending these Paleo pancakes in the blender is what helps make them fluffy, so don’t skip this essential step. Let the pan heat up on medium heat for at least 5 minutes, so it’s hot enough before you add the almond flour batter. And make sure you coat your pan well with coconut oil and turn the heat down to medium-low, otherwise the pancakes will stick to the pan making them hard to flip.
Yes, I did it right. Only 3 ingredients. Are you like some people and just pass up plantains in the grocery store? I used to be like that. I didn’t even know what they were. They looked weird and terrible. I don’t think like that anymore since I’ve gotten to know them. You can either choose them when they are on the yellow side or the green color side. The only difference is that the yellow ones are riper and therefore sweeter. The green ones are less ripe and won’t taste as sweet. That choice is just up to your preference. The yellow ones are a little harder to work with because they are more sticky. I do recommend green but you should experiment and have fun.
