Heat a griddle or cast iron skillet (or any other nonstick surface on which you like to make pancakes) over medium heat. Lightly grease your griddle surface with additional coconut oil. Pour the pancake batter about 1/4 cup at a time into rounds. Allow to cook until the edges of the pancakes are set (when they’re set, they’ll lose their shine), about 1 minute. With a wide, thin spatula, turn each pancake over and allow to finish cooking on the other side (about another 30 seconds). Remove the pancakes from the griddle, and repeat with the remaining batter.

I’ve tried many paleo recipes for pancakes, mostly using bananas. While I love bananas, I use them so much that sometimes I want something else. These pancakes are incredible! I didn’t have tapioca flour, so I used arrowroot as others suggested. I made them with blueberries last night for dinner, and they tasted and looked like REAL pancakes. I saved the leftover batter and made some for breakfast and the batter held up fine overnight in the fridge. Not only are they delish, but they are very easy to turn over in the pan (unlike other paleo recipes). I don’t need to look any further for a great pancake recipe….this is it!


Quiche is usually fair game on the Paleo diet because it’s primarily made with eggs, and eggs are definitely a Paleo approved food. I am a paleo beginner and I have to say these were amazing and so simple. I LOVE banana bread and since starting paleo last week I have really been missing my breads. I was getting sick of eggs, veggies, and almonds so I turned to the internet and was very pleased to find these. You do have to be patient though! but man, they are just what I need for a breakfast on the go. I also made the muffins that one of the comments suggested and they were great as well! You can’t eat them warm, because they taste like banana flavored quiche, but I let them cool completely and I could not tell a difference between them and my favorite banana bread recipe. LOVE it! These veggie roll ups are great to make ahead of time, and it’s a good idea to plan snacks into your day, rather than waiting until you get hungry and then frantically making something. Cucumber acts as the roll, and a tomato is the prize inside. Cashews act as a nice filling to help hold it all together, once they get blended up into a sort of paste. Paleo pancakes are genius. Fluffy, delicious, low-carb stacks of joy. We’ll take 100. But they can actually be quite bland and the epitome of a #PinterestFail. Recipes claiming to be fluffy are often flat, gluten-free flours (if not used correctly) can taste eerily like cardboard, and the pancakes can be so doggone hard to flip that you end up with an inedible pile of melted banana. We’ll actually take zero.

Isn’t it awesome just how many foods you can have with Paleo. There’s virtually nothing that’s off limits as long as you’re using the right ingredients. In this version of the classic chocolate cream pie, the regular crust has been replaced with an almond-based crust so you’ll get more fiber and protein from the crust that you would with any flour-based crust. The first time we made this recipe I followed it to the letter, which resulted in an AMAZING, fluffy texture and wonderful flavor -until we got to the aftertaste, which was very overwhelming and metallic. I assumed it was too much baking soda, but to give the creator credit, maybe it was the brand of baking soda I used. The second time I made the recipe I used a different brand of baking soda, reduced it to 1/2 teaspoon, and added 3/4 teaspoon of lemon juice to the recipe to activate the baking soda. The revised recipe created a wonderful, fluffy pancake with an amazing flavor, and won rave reviews from my son, who said these are his new favorite meal! I think granola bars are pretty healthy so my kids and I eat them for snacks all the time. They aren’t just for breakfast anymore. These granola bars come together quickly and are so easy to make. Chopping the nuts is the most time-consuming part and you probably know that isn’t very hard. You can use whatever nuts you like or have on hand. Just tried this recipe for the first time. It was fantastic!! Even my non-paleo American boyfriend loved them! I’m pretty new to Paleo and have decided not to give up drinking and just drink vodka lime sodas if there is a social occasion. Since your measurement for coconut flour is so specific (and I realize it is a very absorbent flour), do your measurements account for sifting before or after measuring? (I am with you on the less than desirable little bits and you are the first blogger I’ve seen recommend this step that I take after having experiences with certain brands especially having too many bits!)

Anytime you keep things simple you’ll be keeping them Paleo. Think about it: early man didn’t complicate things because they couldn’t complicate things. They had to use what was around them, whatever that would have been. They also didn’t have well-equipped kitchens like we have, so their cooking style would have been rudimentary, yet effective. This tomato soup only adds a few different items plus some seasonings to fresh, ripe tomatoes so it’s going to really pop in your mouth, and the tomato flavor will be front and center. Luckily we have things like immersion blenders to make quick work of the preparation process.
You may need some almond flour in your recipe. I made some paleo pancakes just this morning and mixed the following: 1 mashed up banana, 1 organic egg, 1/2 cup almond flour, 2 T almond butter, cinnamon to taste, and ~1/4 c almond or coconut milk to thin the batter as desired. Butter the pan or use walnut oil, cook as usual. Flip when bubbles form or batter turns golden brown. Top with fruit like strawberries or blueberries, more butter, bacon, or w/ organic 100% maple syrup. This batch makes 6 small, nutty pancakes which serves 2 (unless one is really hungry! I can’t recall where to credit the recipe, but it sure is good.

These sweet and sour gummy candies are actually good for you. Pretty weird huh? They are really easy and actually a lot of fun to make. All you do is mix the ingredients, put them into a mold either by pouring or using a plastic bag with a small hole in the corner. Then either put them in the refrigerator or freezer to set depending on how big of a hurry you’re in. You could make them any shape or color you’d like. Leftover chicken or turkey breast, pork chop, burger, or any meat with avocado/guacamole/guacachoke* smeared on top. You can just roast a pound or two of any kind of meat in the oven for 13 minutes or so and then have all that meat for snacks and meals for the week.
