I feel like my family kind of walks the paleo line once in a while- but only because it is conveniently gluten free 100% of the time! Serve the pancakes warm with maple syrup or more honey. You can also allow the pancakes to cool completely before wrapping them tightly in freezer-safe wrap and freezing. This recipe is a little nutty—literally. It uses almond flour as its main dry ingredient and is mixed with almond milk too. If the batter is watery at first, simply add more flour, and feel free to change things up and use hazelnut flour instead.
