Traditional french fries are something you’ll have to give up on Paleo, but this version has enough modifications to it that you can eat them as a replacement. They’re made from jicama, a food that is potentially better for you than potatoes, although Paleo purists would still want to avoid the whole french fry situation altogether. FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! the flavor of these is amazing!!!!!! But… the consistency created a big issue.. they were so thin that i kept burning them/not cooking the middle all the way through. I flipped too early or too late.. it was kind of a mess in my kitchen this morning. Half way through I added almond flour to try and thicken them up.. no dice! I've used both stainless steel and cast iron pans. great and easy technique for “roasted” chicken. I will say there were no pan juices, just fat in the skillet. Will add to the recipe rotation. Good for family and company dinners too. I've done this using a rimmed sheet pan instead of a skillet and put veggies and potatoes around the chicken for a one-pan meal. These were awesome – my 3 and 5 year olds gobbled them up! I added 1 tsp vanilla extract, 1/4 tsp baking soda and chocolate chips. I cooked a few on the stovetop then decided it was much easier to bake them like cookies. I made pretty small pancakes (probably about 3″) and baked them for 10-12 min at 400 degrees. Thanks for the awesome, easy recipe!
Pro Tip: The lecithin contained within the egg yolks is what lends itself to the firmness and fullness of the pancakes, so if you’re not happy with the overall consistency then I would recommend adjusting the egg quantity before anything else. An alternative fix is to simply add another spoonful of coconut flour, but I think that an extra egg will be the most common solution.
Hi I am back! I just thought I’d share this with you. I am pre-diabetic. This morning, I was intent on making your pancakes, and I did, shared with my sons. I did not check my blood sugar before, but I thought I’d check it around two hours after. (It’s been 2-1/2 hrs, I believe). I still am full (ate 6 of them pancakes topped with butter and real maple syrup). I expected to see around 110++ because of the bananas, nuts, and maple syrup. Guess what? 99!!! and I am still full. My children love these and they don’t even care that they are eating something healthy. I like to make 2-3 pans of them and save them for later. They can be eaten just like potato chips if you want to. These zucchini chips are a great snack but they can also be a great side dish vegetable for dinner. Just don’t cook them until they’re crispy.
