I just made these for my 3 kids and they gobbled them up! I added chocolate chips and made the pancakes about 2 inches in diameter. They were a bit difficult to flip and turned brown quickly, but they still tasted great. We did use a little maple syrup but didn’t use nearly as much as we have with regular pancake mix. I loved that this is a high-nutrient, kid-friendly breakfast. Do you have any suggestions for subbing the coconut flour with a different (nut-free) flour? My daughter could taste the coconut so I’d like to try a different flour next time.

FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! Here’s a trail mix that will definitely sustain you for long periods of time, whether actually on a trail or stuck in a cubicle. You can munch on this mix of nuts, seeds, fruit, and coconut, and they’ve even included a little something sweet in the form of chocolate chips. Hi Kirsty, I recommend any diet that encourages clean eating and avoiding processed food. It doesn’t really matter which one. The more from scratch you cook the better. You can also talk to a trainer to work out some exercise specifically for fat burning just make sure to measure your belly/thighs or wherever you want to loose weight to NOT worry about weight but rather body shape. Muscle weighs more than fat so you might not loose weight but loose fat and become leaner. Diet and exercise go hand in hand. One won’t work without the other. Most importantly though….go you for carrying 3 human beings in your amazing body be kind to yourself and your body, it’s done a hell of a lot of amazing work :)
So about the recipe… You have to buy the Paleo wraps online or if you’re from my area (Mandeville, Louisiana), my friend at Vive sells them. I’m not always a huge fan of buying Paleo products, but 1) these are only made of coconut, so they’re super healthy and 2) these are SO good and will give you so many new options for lunch. After you buy the wraps, make the chicken salad and use a Paleo mayo recipe. Do not get lazy about the Paleo mayo and buy store-bought; the Paleo mayo is much better. Mayo can be tough if you don’t follow directions. Happy lunch-making! Excellent recipe. It turned out great! One thing… my mistake… nothing to do with the recipe, I didn’t read the part to make them tiny at first. So, my first two pancakes were regular pancake sizes and were a little moist in the middle, so the outside ended up being too dry while I was waiting for the inside to cook. HOWEVER, when I poured them in the smaller size as instructed, it turned out great.

Well I didn’t have any egg whites on hand so I went forward with sweet potato purée and to my surprise they were great! My husband who is not full time on the paleo diet and remembers “regular” pancakes agreed with me heartily when I said “it’s amazing how pancake like these are.” Our toddlers are allergic to cinnamon so we used allspice and nutmeg. 1/4C of sweet potato purée per egg. I have to admit the toddlers were not sold on them until we added raisins in our latest batch, but I think they’re asserting independence more than expressing true opinions haha. I might try them again with egg whites or some egg whites some sweet potatoes (thanks Jody!) just because ours were not as filling as others have mentioned them being. We also followed the commenter below by baking them at 400F for 10-12 minutes rather than using a pan. Anyway I know I made a lot of modifications but thanks George for the great basic recipe! They are easy and convenient and I don’t miss the old kind of pancakes one bit when I’m eating them!
I’ve tried making paleo pancakes before with okay results, but this recipe is fantastic! These pancakes taste and look like white-flour pancakes. But I was missing that extra buttery taste from the pancake, so next time, I’ll melt about a tablespoon of ghee and add it to the batter as well as add an extra 1/2 teaspoon of baking powder, because I love insanely buttery, thick pancakes.
