Just finished up my first Whole30 and made these as a celebratory Day 31 dinner. Both my husband and I were amazed how great they were. If you’re looking for a fresh fruit alternative, look no further than fruit leathers or fruit strips. This product can be found at most pharmacies, grocery stores, and even gas stations, but be careful because not all fruit leathers are good Paleo snacks. Check the list of ingredients on the back of the box carefully before purchasing. Your healthier fruit leather options will be those will minimal ingredients, like fruit and water. These are delicious! I didn’t have any coconut flour so I used 1/4 of all plant protein powder and they turned out great. I did separate the egg whites and beat them separately. I couldn’t believe how light and fluffy they were, although they were pretty delicate and wanted to fall apart. Next time I think I would add in some starch or binder to hold them together a bit more.

I used cashew butter. . The batter was really thick so I added one more egg. It’s natural to want crunchy foods, but on Paleo you won’t want to subject yourself to many of the crunchy options out there. In this recipe they are coating a snapper fillet with sesame seeds, so you will get the delicate texture of the fish juxtaposed with the crunchy sesame seeds, all fried up in grass fed butter. They’re made from all natural ingredients (like everything on this list!) and come in no less than a zillion flavors ;). Try blueberry muffin, cashew cookie, lemon or even mint chip brownie!
The Paleo Diet allows in moderation natural sweeteners like honey and maple syrup. You can’t go wrong adding a touch of these natural sweeteners to enhance the flavor and tenderness of the pancake. However, if you want a more golden brown surface color, honey is the solution. The simple sugars, glucose and fructose, and amino acids in the honey cause the Maillard Reaction to occur when the pancake batter cooks, creating a more rapidly brown surface.
I think granola bars are pretty healthy so my kids and I eat them for snacks all the time. They aren’t just for breakfast anymore. These granola bars come together quickly and are so easy to make. Chopping the nuts is the most time-consuming part and you probably know that isn’t very hard. You can use whatever nuts you like or have on hand.
