Ah breakfast, the meal that seems to be defined by eggs and pancakes and one we always seem to skip. I am guilty as charged for skipping breakfast or keeping it defined to the few basics. One of my most valuable lesson since starting to eat Paleo, is knowing that I can have anything I want for breakfast and it's ok. Today though, I choose these perfect paleo pancakes.
These sweet potato chips do a great job of filling in for regular potato chips. They have the same texture you’re looking for, both as you pick them up and once you put them in your mouth. Made them today, with a few changes. I used about 1/2 cup pumpkin for the bananas, added a little maple syrup, vanilla extract, and pumpkin pie spice. Used my ebelskiver pan (love that thing) and put some apple butter in the middle of some of them. YUM! And yes, it’s 80 degrees out here, but pumpkin is my weakness. So I’m not one to make my food in football shapes. Or use dye to color my food in my favorite teams colors. Probably because I don’t have a favorite team. It’s easy to get plantains and bananas mixed up. While plantains are part of the banana family and the two look alike, plantains are not sweet, and instead are used mostly as a starchy vegetable. Think of plantain chips as veggie chips. They are often sliced and baked with olive oil and salt, creating a nice crunch. Yes, I did it right. Only 3 ingredients. Are you like some people and just pass up plantains in the grocery store? I used to be like that. I didn’t even know what they were. They looked weird and terrible. I don’t think like that anymore since I’ve gotten to know them. You can either choose them when they are on the yellow side or the green color side. The only difference is that the yellow ones are riper and therefore sweeter. The green ones are less ripe and won’t taste as sweet. That choice is just up to your preference. The yellow ones are a little harder to work with because they are more sticky. I do recommend green but you should experiment and have fun.
