These did taste amazing, however I am one of those that cannot get these to stay together to flip them. If I waited long enough to flip without it being a scrambled mess, they were black. Should I try a lower heated skillet for a longer time? Or possibly I am not using enough oil in my skillet? My husband and I both ate them….even scrambled they tasted wonderful. These are delicious!! I’ve made a similar recipe that used almond flour instead of almond butter, and they were pretty good, but these are way better, especially the texture. I had no problem with them burning or being gooey in the middle. The only alteration I made was I added a little bit of pure vanilla extract & a little bit of cinnamon. My new go-to breakfast! Serve the pancakes warm with maple syrup or more honey. You can also allow the pancakes to cool completely before wrapping them tightly in freezer-safe wrap and freezing. When you are ready to serve the pancakes, unwrap the stacks, separate the pancakes from each other and place them, frozen, in a toaster oven. Cook at about 300°F until warm, 1 to 2 minutes.


Juli, I made 5 of your recipes on Sunday. They were all wonderful. On the triple protein burgers I substituted Spicy Italian Sausage for the hot dogs. WOW!!!!! It was awesome….so was the Avocado Chorizo Sweet Potato Skins….that is now my favorite sweet potato recipe! When is the next cookbook coming out? Lots of people haven’t discovered the buttery, amazing taste of pili nuts yet. But this type of nut is taking the industry by storm. People are going “nuts” for them (ha ha ha…). All jokes aside, mark my words, in the next few years these will be a staple in everyone’s diet for their flavor and healthy fats and everyone will know what they are. I’m tellin’ ya RIGHT NOW.
For a heartier cake, it’s best to mix a few different flours. This recipe uses almond, coconut, and tapioca flour, and also insists that eggs be at room temperature so the ingredients bind easily and cook perfectly (i.e. not too fast, which can cause them to burn).
