Hi, Jackie, I’m afraid it’s not possible for me to know where you went wrong since I’m not there with you. If you didn’t make any substitutions and measured by weight, then the most likely problem is the quality of your ingredients. Did you use good-quality blanched almond flour, or did you attempt to use almond meal, perhaps from Bob’s Red Mill. That simply won’t work, as Bob’s Red Mill products are of very inconsistent quality and their almond flour in particular is quite poor.

I've used both stainless steel and cast iron pans. great and easy technique for “roasted” chicken. I will say there were no pan juices, just fat in the skillet. Will add to the recipe rotation. Good for family and company dinners too. I've done this using a rimmed sheet pan instead of a skillet and put veggies and potatoes around the chicken for a one-pan meal. Hi Kirsty, I recommend any diet that encourages clean eating and avoiding processed food. It doesn’t really matter which one. The more from scratch you cook the better. You can also talk to a trainer to work out some exercise specifically for fat burning just make sure to measure your belly/thighs or wherever you want to loose weight to NOT worry about weight but rather body shape. Muscle weighs more than fat so you might not loose weight but loose fat and become leaner. Diet and exercise go hand in hand. One won’t work without the other. Most importantly though….go you for carrying 3 human beings in your amazing body be kind to yourself and your body, it’s done a hell of a lot of amazing work :)

My three kids and I just finished a double batch of these and LOVED them! I’ve tried so many paleo pancake recipes and they’ve never turned out as “normal” as these (usually really flat and take forever to cook). I took the advice from another comment and beat the egg whites, separately, before beating them into the batter. We’ll definitely make these again!

I make chicken salad almost weekly…I will have to try them in the wraps soon!!! Just a tip I am so thankful to have discovered. Paleo mayo becomes 30 secs in the making and SUPER EASY if you have an immersion blender! It was well worth my $15!! Just put all the ingredients you listed including the oil in a large mouth pint and a half mason jar put the blender to the bottom and blend! There is a video online somewhere. I started with whole almonds in my vitamix then added the rest it worked out just fine.
