Yes, the egg is raw, and raw egg is perfectly safe to consume, so long as you trust the source of your eggs. Anything you buy from a grocery store should be set, and if you get them from the Farmer’s Market or grow your own, just make sure you wash the shell VERY WELL before using raw egg, as this is where most of the contaminate comes from. (The shell isn’t sterile, you crack the egg, the shell contacts the egg and leaves some salmonella behind, the egg is now unsafe)

These did taste amazing, however I am one of those that cannot get these to stay together to flip them. If I waited long enough to flip without it being a scrambled mess, they were black. Should I try a lower heated skillet for a longer time? Or possibly I am not using enough oil in my skillet? My husband and I both ate them….even scrambled they tasted wonderful. We are new to Paleo and are trying lots of recipes. Thanks for all your ideas!!


Thank you for posting this! I have been practicing the paleo diet on and off for a few months and getting little cravings in between is hard because I know I can’t eat junk. Hey Tessa! Good question. So after calculating from my credit card, I spend about $275 on average on food without really budgeting. I stick to eggs and chicken as my main form of protein and look for when grassfed beef is on sale. Even at $7 a pound I can get about 3 meals out of that, so it’s not too bad. I just made these for my 3 kids and they gobbled them up! I added chocolate chips and made the pancakes about 2 inches in diameter. They were a bit difficult to flip and turned brown quickly, but they still tasted great. We did use a little maple syrup but didn’t use nearly as much as we have with regular pancake mix. I loved that this is a high-nutrient, kid-friendly breakfast. Do you have any suggestions for subbing the coconut flour with a different (nut-free) flour? My daughter could taste the coconut so I’d like to try a different flour next time.

Any time I see a grain-free recipe for pancakes that says “like REAL pancakes” I always hope “Yes, maybe this is THE ONE!” But like all the others, it’s not. Comments on here saying that there was a strong baking soda taste were correct. I even added in chocolate chips to cover it a bit (still there!) and followed some tips I saw in the comments–I mixed the dry ingredients together then ran them through a mesh strainer (twice!) to make sure everything was well incorporated, added a bit of vanilla and cinnamon, like I used to with regular pancakes, and folded the egg whites at the end to keep the pancakes fluff(ier). I will give them that: they stayed thick, and folding in the egg whites did help most of them from getting too dense (but never fluffy like a real pancake). Then again, mine definitely didn’t come out like the video batter–it was closer to a cookie dough consistency.
I make your old version with coconut flour frequently, but I just put it in a cake pan or jelly roll pan and bake it with a few add ins if I’m feeling generous. Show me a child that refuses cake for breakfast because I don’t think they exist, definitely not in my house anyway!
