Any time I see a grain-free recipe for pancakes that says “like REAL pancakes” I always hope “Yes, maybe this is THE ONE!” But like all the others, it’s not. Comments on here saying that there was a strong baking soda taste were correct. I even added in chocolate chips to cover it a bit (still there!) and followed some tips I saw in the comments–I mixed the dry ingredients together then ran them through a mesh strainer (twice!) to make sure everything was well incorporated, added a bit of vanilla and cinnamon, like I used to with regular pancakes, and folded the egg whites at the end to keep the pancakes fluff(ier). I will give them that: they stayed thick, and folding in the egg whites did help most of them from getting too dense (but never fluffy like a real pancake). Juli, I made 5 of your recipes on Sunday. They were all wonderful. On the triple protein burgers I substituted Spicy Italian Sausage for the hot dogs. WOW!!!!! My children love these and they don’t even care that they are eating something healthy. I like to make 2-3 pans of them and save them for later. They can be eaten just like potato chips if you want to. These zucchini chips are a great snack but they can also be a great side dish vegetable for dinner. Just don’t cook them until they’re crispy. My suggestion for an on-the-go version: I keep my ripe peeled bananas in the freezer. In the morning before work, I break off a 4″ piece of banana, put it in a microwave safe glass bowl with 1-2 Tbl almond butter (or cashew if I am out of almond). Put that in the microwave for about 1 minute (microwave temps vary!). Pull it out and it is soft and easy to whip with a fork. Add 1 egg, whip again until incorporated. Add silver dollar sized rounds to a coconut oil greased cast iron skillet, and cook. Yum yum!

Yes, I did it right. Only 3 ingredients. Are you like some people and just pass up plantains in the grocery store? I used to be like that. I didn’t even know what they were. They looked weird and terrible. I don’t think like that anymore since I’ve gotten to know them. You can either choose them when they are on the yellow side or the green color side. The only difference is that the yellow ones are riper and therefore sweeter. The green ones are less ripe and won’t taste as sweet. That choice is just up to your preference. The yellow ones are a little harder to work with because they are more sticky. I do recommend green but you should experiment and have fun.
