This Paleo diet recipe has a traditional Italian feel to it thanks to the use of Italian sausage and the spices it is packed with. It then takes it one step further with pesto, an item that you can make on your own following a Paleo friendly pesto recipe. These are wicked amazing!! I made them the first time, as is, just cut the recipe down to 1/3 so it made 3 small pancakes for just me. As is they were great – really filling (I could hardly finish them all and that’s a rarity for me and pancakes) – but a bit too sweet! I followed the ingredients to a T so I was surprised by the sweetness. I made them this morning but with chunky, organic Peanut Butter instead and added 1/4 tsp salt (because I think pancakes should be a hint salty), 1/4 tsp vanilla and 1 tsp chopped walnuts. Yes, I did it right. Only 3 ingredients. Are you like some people and just pass up plantains in the grocery store? I used to be like that. I didn’t even know what they were. They looked weird and terrible. I don’t think like that anymore since I’ve gotten to know them. You can either choose them when they are on the yellow side or the green color side. The only difference is that the yellow ones are riper and therefore sweeter. The green ones are less ripe and won’t taste as sweet. That choice is just up to your preference. The yellow ones are a little harder to work with because they are more sticky. I do recommend green but you should experiment and have fun. So about the recipe… You have to buy the Paleo wraps online or if you’re from my area (Mandeville, Louisiana), my friend at Vive sells them. I’m not always a huge fan of buying Paleo products, but 1) these are only made of coconut, so they’re super healthy and 2) these are SO good and will give you so many new options for lunch. After you buy the wraps, make the chicken salad and use a Paleo mayo recipe. Do not get lazy about the Paleo mayo and buy store-bought; the Paleo mayo is much better. Mayo can be tough if you don’t follow directions. Happy lunch-making!
