I am so, so, so, so, so, so excited about this recipe!!! The hubs and I love to have pancakes on Saturday mornings, but they really can blow your entire day if you are a calorie counter and aren’t careful. The added flours are just so calorie rich! I don’t necessarily follow one specific diet, but I have been trying really hard to cut out processed foods and the Paleo guidelines fit really well with that. Plus you get to eat *MEAT* which I could never, ever, ever live without. I’ve been making a lot of vegan pancakes which are definitely healthier than a standard pancake batter…until I ran across the Paleo pancakes. This may not follow the traditional recipe exactly, but all of the distinct flavors are there, thanks to the use of full-fat coconut milk. DIY roasted nuts are easier than you’d think—all you need is a bag of mixed nuts, an egg white, and go-to spices: sea salt, pepper, rosemary, sage, garlic powder, and paprika. Coat the nuts in the egg white in one bowl, and mix all the spices in another. Pour the spice mix over the nuts, transfer to a baking sheet lined with foil or parchment paper, and roast for 16 minutes.

Hello. I tried this recipe this morning. I new to this paleo/gluten free lifestyle, so this was a nice test of something different to replace pancakes, which I love, but which my body hates. I found them very crepe like as well. Almost like the French part of Frech Toast. I added a tsp of vanilla extract, and a little salt. I look forward to experimenting with this for sure. Next time I will use really ripe banana’s, no cinnamon and add pecan. I also used a cast iron skillet which might just get to hot for these delicate pancakes. But low and slow seemed to do the trick. Thanks for posting this! It makes it so much easier to transition to healthy grain free eating when you have great recipes like this!
Yes, I did it right. Only 3 ingredients. Are you like some people and just pass up plantains in the grocery store? I used to be like that. I didn’t even know what they were. They looked weird and terrible. I don’t think like that anymore since I’ve gotten to know them. You can either choose them when they are on the yellow side or the green color side. The only difference is that the yellow ones are riper and therefore sweeter. The green ones are less ripe and won’t taste as sweet. That choice is just up to your preference. The yellow ones are a little harder to work with because they are more sticky. I do recommend green but you should experiment and have fun. Don’t worry about the skin being brown and a little bruised. The skin on plantains is really thick so the fruit is more protected than with a banana.
*Sometimes instead of regular guacamole, I’ll make “guacachoke dip”, which is this: take a large can of artichoke hearts, an avocado, a quarter cup of lime juice, a pinch of cumin, and a pinch of chile powder and mix it up in a blender or food processor. You can add olive oil or coconut milk to make it creamier if you want. This little creation is amazing and can be served with pretty much any meat or veggie. Well I didn’t have any egg whites on hand so I went forward with sweet potato purée and to my surprise they were great! My husband who is not full time on the paleo diet and remembers “regular” pancakes agreed with me heartily when I said “it’s amazing how pancake like these are.” Our toddlers are allergic to cinnamon so we used allspice and nutmeg. 1/4C of sweet potato purée per egg. I have to admit the toddlers were not sold on them until we added raisins in our latest batch, but I think they’re asserting independence more than expressing true opinions haha. They loved them with raisins! Oh, I also added a bit of flax meal. I might try them again with egg whites or some egg whites some sweet potatoes (thanks Jody!) just because ours were not as filling as others have mentioned them being. We also followed the commenter below by baking them at 400F for 10-12 minutes rather than using a pan. Anyway I know I made a lot of modifications but thanks George for the great basic recipe!
