Mer. Lol. Mine didnt turn out :(. And one thing I habe to say is 350° doesnt help me when it comes to cooking ON the stove. I dont have a temperature for the flame. Only high medium and low. So I heated it to medium but it didnt seem to be hot enough (each stove is different) so I heated it a little hotter than medium and followed the directions. They flipped fine because I used a nonstick skillet. But they came out mushy. I even cooked them 4 minutes on each side which you only said 2-3 minutes on each side. Iused sesame seed butter but it is similar to almond so I figured itd be fine. Not sure that the nut butter is the issue. I tried turning down the burner as well. Nothing worked. Still mushy. Well I didn’t have any egg whites on hand so I went forward with sweet potato purée and to my surprise they were great! My husband who is not full time on the paleo diet and remembers “regular” pancakes agreed with me heartily when I said “it’s amazing how pancake like these are.” Our toddlers are allergic to cinnamon so we used allspice and nutmeg. 1/4C of sweet potato purée per egg. I have to admit the toddlers were not sold on them until we added raisins in our latest batch, but I think they’re asserting independence more than expressing true opinions haha. They loved them with raisins! Oh, I also added a bit of flax meal. I might try them again with egg whites or some egg whites some sweet potatoes (thanks Jody!) just because ours were not as filling as others have mentioned them being. We also followed the commenter below by baking them at 400F for 10-12 minutes rather than using a pan. Anyway I know I made a lot of modifications but thanks George for the great basic recipe! They are easy and convenient and I don’t miss the old kind of pancakes one bit when I’m eating them!

FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! I use grapeseed oil because the olive oil is a bit bitter for me.
Salmon is one of the best foods you can eat on Paleo, and here they have added maple syrup to the recipe so that you’ll get the rich flavor and sweetness of the syrup counter-balancing the strong flavor of the salmon. It also gives it a nice glaze, making it more appetizing to look at. They also have a good mix of spices and you’ll find cinnamon, nutmeg, onion powder and pepper being used to give this a remarkable flavor that you probably haven’t experienced before in regards to salmon. Serve this up with a baked sweet potato and you’re good to go.
Stuffed burgers are all the rage, and you can get into the craze with the Paleo diet, you just have to stuff the burger with Paleo friendly foods. Paleo mayo becomes 30 secs in the making and SUPER EASY if you have an immersion blender! It was well worth my $15!! Just put all the ingredients you listed including the oil in a large mouth pint and a half mason jar put the blender to the bottom and blend! There is a video online somewhere.
