I make your old version with coconut flour frequently, but I just put it in a cake pan or jelly roll pan and bake it with a few add ins if I’m feeling generous. Show me a child that refuses cake for breakfast because I don’t think they exist, definitely not in my house anyway! I can’t wait to try this with tapioca instead, because the whole reason I baked it was because I couldn’t fry them up quick enough.
Juli, I made 5 of your recipes on Sunday. They were all wonderful. On the triple protein burgers I substituted Spicy Italian Sausage for the hot dogs. WOW!!!!! It was awesome….so was the Avocado Chorizo Sweet Potato Skins….that is now my favorite sweet potato recipe! When is the next cookbook coming out? With Paleo it is important to use the proper amount of spices and seasonings so that you don’t get tired of just eating meat and vegetables all the time. In this recipe they have an interesting mix of spices, and use plenty of lime so you’ll get a citrusy, spicy flavor. It starts off with chicken thighs and breasts, and then coats it all in olive oil so the spices will stick to the meat better. They’re using coriander, cumin, garlic powder, black pepper, red pepper flakes, and sea salt so this is definitely not lacking in the flavor department.
My three kids and I just finished a double batch of these and LOVED them! I’ve tried so many paleo pancake recipes and they’ve never turned out as “normal” as these (usually really flat and take forever to cook). If you want to try a Japanese-style burger without traveling to Japan, this is your ticket. They’re using organic grass-fed ground beef from Trader Joe’s, an excellent way to start off any burger recipe. From there they add onion, garlic, an egg, and some seasoning to get these just right. They then pan fry them, and they give the instruction of not squeezing them during the cooking process because they’ll end up dry. You can flip them as needed, but when it’s all said and done these retain their round shape.
