This chorizo chili is made in the Crock Pot so it’s going to come out perfectly cooked without much attention from you. It uses a combination of grass fed beef, as well as chorizo sausage which gives it plenty of spice, which is good if you like your chili spicy. Not to worry, there are other spices and seasonings used to kick up the heat, so you can adjust it according to your own taste. For example there are Ro-Tel tomatoes, which carry their own spiciness, so you may want to opt out of those and just use regular tomatoes instead. There’s also cumin, as well as chipotle peppers, just add more or less as desired.

Do you think I could sub Casava flour instead of almond flour and a different milk to make it nut free? I haven’t done a lot with casava flour but I work in a nut free environment and so many paleo recipes I can’t bring with me! I will try your nut free recipe for now but wanted to know your thoughts! :) I made this recipe as it calls for and it’s amazing! Just want one I can bring to work haha!

The first time we made this recipe I followed it to the letter, which resulted in an AMAZING, fluffy texture and wonderful flavor -until we got to the aftertaste, which was very overwhelming and metallic. I assumed it was too much baking soda, but to give the creator credit, maybe it was the brand of baking soda I used. The second time I made the recipe I used a different brand of baking soda, reduced it to 1/2 teaspoon, and added 3/4 teaspoon of lemon juice to the recipe to activate the baking soda. The revised recipe created a wonderful, fluffy pancake with an amazing flavor, and won rave reviews from my son, who said these are his new favorite meal! Leftover chicken or turkey breast, pork chop, burger, or any meat with avocado/guacamole/guacachoke* smeared on top. You can just roast a pound or two of any kind of meat in the oven for 13 minutes or so and then have all that meat for snacks and meals for the week. Sometimes we make 3-pound hams in our smoker, slice it up, put it in a glass container and then I can just grab a piece of ham when I want it. So about the recipe… You have to buy the Paleo wraps online or if you’re from my area (Mandeville, Louisiana), my friend at Vive sells them. I’m not always a huge fan of buying Paleo products, but 1) these are only made of coconut, so they’re super healthy and 2) these are SO good and will give you so many new options for lunch. After you buy the wraps, make the chicken salad and use a Paleo mayo recipe. Do not get lazy about the Paleo mayo and buy store-bought; the Paleo mayo is much better. Mayo can be tough if you don’t follow directions. Happy lunch-making!
