Nina, how much cinnamon do you use for your pancakes? I have tried banana pancakes, with just 2 eggs, a banana and then some cinnamon and vanilla, but….I find seems like the banana tends to overpower things a bit, not sure if I’m not used to or not or if using an organic one would make a difference, but it’s a little bit of an adjustment. I used a heaping spoonful of crunchy peanut butter and a small banana (about half a normal banana) with an egg and cinnamon. I mashed it up with a spoon in a bowl and put it on a heated nonstick pan with butter on it. I used a small, thin pan over the lowest setting on the smallest gas burner we have. No problems with burning, sticking, or flipping here. They were dense, thin, and tasted like fried peanut butter! My picky non-paleo man seemed to enjoy them with his nutella. They started breaking apart when I added some shredded coconut. I think I’ll add more egg or egg white next time or maybe some baking powder to make them fluffier. Possibly baking would be better. Very good recipe, since it’s hard for me to get a recipe to turn out well. :)

I’ve tried making paleo pancakes before with okay results, but this recipe is fantastic! These pancakes taste and look like white-flour pancakes. But I was missing that extra buttery taste from the pancake, so next time, I’ll melt about a tablespoon of ghee and add it to the batter as well as add an extra 1/2 teaspoon of baking powder, because I love insanely buttery, thick pancakes.
These pancakes are great, just like all of your recipes. One thing I noticed though is that there isn’t enough acid in the recipe to neutralize the baking soda. This is probably why so many people have a soapy baking soda aftertaste. A lot of people don’t seem to realize that when you are using baking soda The recipe has to have an acidic ingredient like lemon juice, vinegar, buttermilk, molasses or chocolate in it. I used baking powder instead and it turned out great.
Chicken parmesan is not something that you would typically be having on Paleo because it is coated in bread crumbs. But this chicken parm is coated with Parmesan cheese and almond flour, which replaces the bread crumbs. You’ll still get that classic crunchy outer covering on the chicken, and of course the Parmesan will be baked right onto the chicken, so it’s just a matter of getting the other ingredients right. Absolutely amazing! I love your recipes and this one will definitely be a staple for a family weekend breakfast. I have made this recipe using tapioca flour and today, with arrowroot flower. My preference is arrowroot flower. Tapioca flour has it’s place in some recipes but it can lead to a gummy texture, mainly in the middle of whatever it is I’m making. Arrowroot flour made these taste just like the real thing. My husband, who would put extra gluten on food (his running joke) was convinced these were the real thing. I think I’ll start using arrowroot flour for all of my recipes that call for tapioca. Ashley, do they always interchange so well?
