Made them today, with a few changes. I used about 1/2 cup pumpkin for the bananas, added a little maple syrup, vanilla extract, and pumpkin pie spice. Used my ebelskiver pan (love that thing) and put some apple butter in the middle of some of them. YUM! And yes, it’s 80 degrees out here, but pumpkin is my weakness. Your pumpkin butter is next on my list to try.
Well I didn’t have any egg whites on hand so I went forward with sweet potato purée and to my surprise they were great! My husband who is not full time on the paleo diet and remembers “regular” pancakes agreed with me heartily when I said “it’s amazing how pancake like these are.” Our toddlers are allergic to cinnamon so we used allspice and nutmeg. 1/4C of sweet potato purée per egg. I have to admit the toddlers were not sold on them until we added raisins in our latest batch, but I think they’re asserting independence more than expressing true opinions haha. They loved them with raisins! Oh, I also added a bit of flax meal. I might try them again with egg whites or some egg whites some sweet potatoes (thanks Jody!) just because ours were not as filling as others have mentioned them being. We also followed the commenter below by baking them at 400F for 10-12 minutes rather than using a pan. Anyway I know I made a lot of modifications but thanks George for the great basic recipe! Absolutely amazing! I love your recipes and this one will definitely be a staple for a family weekend breakfast. I have made this recipe using tapioca flour and today, with arrowroot flower. My preference is arrowroot flower. Tapioca flour has it’s place in some recipes but it can lead to a gummy texture, mainly in the middle of whatever it is I’m making. Arrowroot flour made these taste just like the real thing. My husband, who would put extra gluten on food (his running joke) was convinced these were the real thing. Making these for the first time right now! I was so excited to get them in the pan I forgot the cinnamon. I don’t have a skillet and didnt know what the equivalent of 350* was on my gas stove top so I did them in a sauté pan on (2 to 3-low) and they came out great. I’ve tried many paleo recipes for pancakes, mostly using bananas. While I love bananas, I use them so much that sometimes I want something else. These pancakes are incredible! I didn’t have tapioca flour, so I used arrowroot as others suggested. I made them with blueberries last night for dinner, and they tasted and looked like REAL pancakes. I saved the leftover batter and made some for breakfast and the batter held up fine overnight in the fridge. Not only are they delish, but they are very easy to turn over in the pan (unlike other paleo recipes). We’ve been Paleo-ish the past couple of years but with another baby due any day, I’ve been thrilled to find your blog and cookbooks. Sometimes I don’t have the money to keep almond flour on hand and my homemade version doesn’t have the lovely crumb bc it’s not as fine. My 3YO sometimes wants what her older siblings are having. We all tolerate rice flour well and your recipes have been awesome. I think it’s also because you aren’t shy about advising us to use a scale rather than volume measurements. My nonGF husband LOVED the pretzel rolls. (Yeah, I was too lazy to do the pretzel dogs and just made the rolls.) OMG! You so totally rock! I definitely want the new cookbook, too. I hate spending $2 extra to get a GF bun for me and my two kids while eating out or $1.25 for a frozen ok bun. This recipe is a little nutty—literally. It uses almond flour as its main dry ingredient and is mixed with almond milk too. If the batter is watery at first, simply add more flour, and feel free to change things up and use hazelnut flour instead. These Paleo pancakes are on the heartier side, especially if you add some tapioca powder, which will help avoid any breakage.

I have been making pancakes with coconut flour and my husband eats them and doesn’t mind them, but doesn’t love them. I made them with almond flour way back and they were much more satisfying. I live in the Caribbean, so many things are hard to find, but they are making Casava flour, breadfruit flour, pumpkin and green banana flour and I can get chick pea flour which has been good! I would love to try the pumpkin flour in pancakes, but not sure if I would use it the same way you have used the almond flour in this recipe?

The first time we made this recipe I followed it to the letter, which resulted in an AMAZING, fluffy texture and wonderful flavor -until we got to the aftertaste, which was very overwhelming and metallic. I assumed it was too much baking soda, but to give the creator credit, maybe it was the brand of baking soda I used. The second time I made the recipe I used a different brand of baking soda, reduced it to 1/2 teaspoon, and added 3/4 teaspoon of lemon juice to the recipe to activate the baking soda. The revised recipe created a wonderful, fluffy pancake with an amazing flavor, and won rave reviews from my son, who said these are his new favorite meal! Meatloaf is one food you don’t have to give up while following the Paleo diet. The great thing about meatloaf is everyone usually likes it enough to make it a regular menu item. In this version it has been miniaturized so that you don’t end up making one big loaf, but rather individual-sized portions so that everyone gets a nice outer crust, and it avoids the problem of soggy or crustless middle section pieces. You’ll notice that the breadcrumbs have been done away with as they aren’t allowed on the Paleo diet. You won’t notice they’re gone because there’s coconut flour instead.
These pizza bites don’t need a crust because they’re resting on a slice of uncured pepperoni or salami. This makes them a snack that you can make in a jiffy, because you don’t have to wait around for the crust to bake. It also helps give them a big pizza taste, even if you opt out of the optional organic mozzarella cheese. The sauce is the real kicker here, and it’s made using organic tomato sauce and the necessary ingredients to make it taste like a pizza.
