We’ve been Paleo-ish the past couple of years but with another baby due any day, I’ve been thrilled to find your blog and cookbooks. Sometimes I don’t have the money to keep almond flour on hand and my homemade version doesn’t have the lovely crumb bc it’s not as fine. My 3YO sometimes wants what her older siblings are having. We all tolerate rice flour well and your recipes have been awesome. I think it’s also because you aren’t shy about advising us to use a scale rather than volume measurements. My nonGF husband LOVED the pretzel rolls. (Yeah, I was too lazy to do the pretzel dogs and just made the rolls.) OMG! You so totally rock! I definitely want the new cookbook, too. I hate spending $2 extra to get a GF bun for me and my two kids while eating out or $1.25 for a frozen ok bun. Hi, I was wondering if anyone has made these without eggs? They sound great but I am allergic to egg yolks. I was thinking of substituting sweet potato purée as that was recommended as an egg substitute for baking on another site, but wasn’t sure how that would work in a flourless recipe sweetened with bananas. I want to keep it as close to the original as I can with my allergies! We love sweetening things with bananas…any thoughts?
Best stuff ever. I swear. There’s so many different HEALTHY flavors of jerky and meat sticks and even ones for kids! I love their traditional beef jerky and I can’t stop eating the cilantro lime flavored sticks. The date and rosemary flavor is pretty freaking amazing as well. There’s so many options that there’s no way you won’t find something you can’t get enough of!
Making these for the first time right now! I was so excited to get them in the pan I forgot the cinnamon. I don’t have a skillet and didnt know what the equivalent of 350* was on my gas stove top so I did them in a sauté pan on (2 to 3-low) and they came out great. I made these this weekend. They were great. I added some sliced strawberries to top them and in between the short stack of pancakes. Delicious! My wife loved the flavor, but found the texture to be a little odd.I am thinking about adding a 1/4 cup of almond flour to give them a boost in the texture department. I am so, so, so, so, so, so excited about this recipe!!! The hubs and I love to have pancakes on Saturday mornings, but they really can blow your entire day if you are a calorie counter and aren’t careful. The added flours are just so calorie rich! Before starting on your journey to Paleo, perhaps it was common for you to run to the store and grab a box of highly processed, expensive gluten-free crackers thinking gluten-free must equal health.  Now that you know that gluten-free does not always equal healthy, you may feel a bit stumped as to how to incorporate crackers into your diet.  The good news is that making your own gluten-free, grain-free crackers can be a rather easy process.  Most Paleo cracker recipes have very few ingredients and require very little time to prepare.  If you have never been much of a cracker fan, however, replace the cracker recipe ideas listed with some of your favorite finger veggies and enjoy them with some of the Paleo-friendly dips suggested below:
You may need some almond flour in your recipe. I made some paleo pancakes just this morning and mixed the following: 1 mashed up banana, 1 organic egg, 1/2 cup almond flour, 2 T almond butter, cinnamon to taste, and ~1/4 c almond or coconut milk to thin the batter as desired. Butter the pan or use walnut oil, cook as usual. Flip when bubbles form or batter turns golden brown. Top with fruit like strawberries or blueberries, more butter, bacon, or w/ organic 100% maple syrup. This batch makes 6 small, nutty pancakes which serves 2 (unless one is really hungry! I can’t recall where to credit the recipe, but it sure is good.

These are wicked amazing!! I made them the first time, as is, just cut the recipe down to 1/3 so it made 3 small pancakes for just me. As is they were great – really filling (I could hardly finish them all and that’s a rarity for me and pancakes) – but a bit too sweet! I followed the ingredients to a T so I was surprised by the sweetness. I made them this morning but with chunky, organic Peanut Butter instead and added 1/4 tsp salt (because I think pancakes should be a hint salty), 1/4 tsp vanilla and 1 tsp chopped walnuts.
