I have been making pancakes with coconut flour and my husband eats them and doesn’t mind them, but doesn’t love them. I made them with almond flour way back and they were much more satisfying. I live in the Caribbean, so many things are hard to find, but they are making Casava flour, breadfruit flour, pumpkin and green banana flour and I can get chick pea flour which has been good! These are the best gluten free pancakes I’ve ever had… and maybe the best pancakes ever, period! They are so good! I added an overripe banana and decreased the coconut milk a tad to keep the consistency right. I topped them with whipped coconut cream and fresh strawberries. OMG. This recipe does its best to replicate the chocolate Hostess brand donuts, but in a way that gets rid of the lousy ingredients and replaces them with wholesome ones. They contain wonderful things like medjool dates, eggs, and coconut flour, rather than what you’ll find in a package of Hostess donettes. The main ingredient in those is sugar, followed by partially hydrogenated vegetable oil which provides trans fat, and wheat flour. FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! I only used one banana, one egg, and scraped the bottom of my natural almond butter, a dash of cinnamon, and they were great. I would make the full size if I was feeding my husband too but I just wanted to say that if you want to make just enough for yourself it still works great.
