Hi I am back! I just thought I’d share this with you. I am pre-diabetic. This morning, I was intent on making your pancakes, and I did, shared with my sons. I did not check my blood sugar before, but I thought I’d check it around two hours after. (It’s been 2-1/2 hrs, I believe). I still am full (ate 6 of them pancakes topped with butter and real maple syrup). I expected to see around 110++ because of the bananas, nuts, and maple syrup. Guess what? 99!!! and I am still full. But I gotta keep trying to eat 3 meals a day. Maybe light lunch in another hour… :)

I’m wondering if it was your pan. Makes a big difference when you need to flip something. Actually, sometimes it makes all the difference. And seeing how so many other people had a completely different experience, I’d be willing to bet that’s probably what it was. Let the pan heat up on medium heat for at least 5 minutes, so it’s hot enough before you add the almond flour batter. I made these this weekend. They were great. I added some sliced strawberries to top them and in between the short stack of pancakes. Delicious! My wife loved the flavor, but found the texture to be a little odd.I am thinking about adding a 1/4 cup of almond flour to give them a boost in the texture department. All in all, I thought they were great!


I made these amazing pancakes they were amazing! the whole family loves them! I have tried fancy variations replacing the applesauce with pumpkin and adding pumpkin pie spice. and to make this even more decadent I have topped it with whipped coco cream! Best paleo pancakes ever. I have been trying different recipes over the last couple years and this is the only one that we plan to make again. I also noticed a bit of a funky after taste but I know for a fact its my baking soda. Its old and i didnt use a blender. So some bites had more than others. This was a hit for the whole family! My suggestion for an on-the-go version: I keep my ripe peeled bananas in the freezer. In the morning before work, I break off a 4″ piece of banana, put it in a microwave safe glass bowl with 1-2 Tbl almond butter (or cashew if I am out of almond). Put that in the microwave for about 1 minute (microwave temps vary!). Pull it out and it is soft and easy to whip with a fork. Add 1 egg, whip again until incorporated. Add silver dollar sized rounds to a coconut oil greased cast iron skillet, and cook. Yum yum!

I realize that this is the silliest question and maybe it relates to the mushy question someone else had. I tried making these about a month ago and had an awful hard time flipping them without them either sticking to the turner or them breaking all apart on me. How can I get them to turn like those inflammatory pancakes that people make (very easy)?

Hey Amanda, I’d love to try this as well. I’m not sure if they will freeze well, but I don’t see why not. I think freezing the chicken salad would be smarter, and taking that out on a Sunday and just packing those up for the week and storing in the fridge may be better. The wraps probably don’t freeze well. But for most of my once a month cooking, it always requires a bit of assembling the week of! Does that make sense?
