Oh also…just in case anyone doesn’t have arrowroot or tapioca starch…whole root cassava works just as well. Have even added gelatin the past 2 times and they worked well. The do seem to brown quicker, and I’m not sure if it’s the cassava or gelatin causing this.. But I like them like that!

Hi, I was wondering if anyone has made these without eggs? They sound great but I am allergic to egg yolks. I was thinking of substituting sweet potato purée as that was recommended as an egg substitute for baking on another site, but wasn’t sure how that would work in a flourless recipe sweetened with bananas. Since your measurement for coconut flour is so specific (and I realize it is a very absorbent flour), do your measurements account for sifting before or after measuring? (I am with you on the less than desirable little bits and you are the first blogger I’ve seen recommend this step that I take after having experiences with certain brands especially having too many bits!)

OK George so I finally found a recipe easy enough to try and all I can say is “All I Want For Christmas is a Blendtec!” I’ve been wanting to make my own nut butters but a regular old food processor does not do the trick. So I improvised and used almond meal. I also can’t eat that many pancakes so I used 2 bananas 2 eggs and 1/2 C almond meal. Then some stuff like ginger, nutmeg. They tasted great but fell apart. Not to worry I will try it again with the nut butter. Thank you!
