Yes, the egg is raw, and raw egg is perfectly safe to consume, so long as you trust the source of your eggs. Anything you buy from a grocery store should be set, and if you get them from the Farmer’s Market or grow your own, just make sure you wash the shell VERY WELL before using raw egg, as this is where most of the contaminate comes from. (The shell isn’t sterile, you crack the egg, the shell contacts the egg and leaves some salmonella behind, the egg is now unsafe)
the flavor of these is amazing!!!!!! But… the consistency created a big issue.. they were so thin that i kept burning them/not cooking the middle all the way through. I flipped too early or too late.. it was kind of a mess in my kitchen this morning. Half way through I added almond flour to try and thicken them up.. no dice! Heat a griddle or cast iron skillet (or any other nonstick surface on which you like to make pancakes) over medium heat. Lightly grease your griddle surface with additional coconut oil. Pour the pancake batter about 1/4 cup at a time into rounds. Allow to cook until the edges of the pancakes are set (when they’re set, they’ll lose their shine), about 1 minute.
