These chips are made from parsnips, and most new Paleo followers will probably have a very limited experience with the parsnip. It does find its way into a lot of Paleo cooking because it can be used in many different ways. This uses Greek yogurt, which is a fermented form of dairy and considered acceptable by some following the Paleo plan. Others see it as dairy is dairy and don’t eat it, so it’s up to you to decide if you want to incorporate a bit of fermented dairy like Greek yogurt into your diet or not. The rest of the recipe is just a bit of seasoning to help the avocado out in the flavor department.
Almond butter and most other nut butters, like sunflower, coconut, hazelnut, and cashew butter, are Paleo-friendly and make for a tasty treat. Try nut butter spread on bananas or apples for a healthy snack, or even just a spoonful right out of the jar, which is a decadent treat. If you’re counting calories, cashew butter has the fewest, at about 94 per tablespoon, followed by almond butter with 98. I just made these for my 3 kids and they gobbled them up! I added chocolate chips and made the pancakes about 2 inches in diameter. They were a bit difficult to flip and turned brown quickly, but they still tasted great. We did use a little maple syrup but didn’t use nearly as much as we have with regular pancake mix. The do seem to brown quicker, and I’m not sure if it’s the cassava or gelatin causing this.. But I like them like that!
