My FAVOURITE paleo pancake recipe ever! During a paleo challenge in September last year, a very similar recipe was posted on our group page. They were delicious and they have become a common weekend breakfast for me. In fact, I was having them so often, I had to force myself to have a break from them! They’re absolutely delicious with fresh or frozen blueberries, raspberries & strawberries drizzled with coconut cream. However, I still cannot bring myself to add bacon to pancakes. This is Paleo’s answer to the tortilla soup you used to love ordering in restaurants, but can’t have anymore because it likely contains beans. Beans are a no-no on Paleo, and this soup recipe deftly avoids them, but still delivers on the flavor you are wanting. This actually is very well-balanced for a Paleo dish, and if you eat enough of it, it can be a meal all by itself. If you just want a cup it can serve as a nice appetizer for a Mexican main dish. We love that this is topped with avocado, one food you should definitely start eating more of if you don’t already.
I feel like my family kind of walks the paleo line once in a while- but only because it is conveniently gluten free 100% of the time! Hi Kirsty, I recommend any diet that encourages clean eating and avoiding processed food. It doesn’t really matter which one. The more from scratch you cook the better. You can also talk to a trainer to work out some exercise specifically for fat burning just make sure to measure your belly/thighs or wherever you want to loose weight to NOT worry about weight but rather body shape. Muscle weighs more than fat so you might not loose weight but loose fat and become leaner. Diet and exercise go hand in hand. One won’t work without the other. My three kids and I just finished a double batch of these and LOVED them! Oh my goodness! I just made & ate the paleo pancakes – they were the bomb! Lol.
