FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! This snack has Paleo written all over it. It has just the essential ingredients needed for a fried almond snack, and they’ve made this incredibly simple to follow. Almonds are one of the healthiest nuts you can eat, but sometimes they can get a little boring. By frying them you immediately improve the taste, and since they have you frying them in a Paleo approved oil you will be staying on the Paleo path. I feel like my family kind of walks the paleo line once in a while- but only because it is conveniently gluten free 100% of the time! But a lot of the paleo baking leaves something to be desired… which probably why I keep your blog in my “favorites” line on my internet tab. :) I love trying out new things- especially when it boasts of making my mornings a little easier (I love pre-cooking/baking and thawing for breakfast!)… So I think these need to go in my “to try” pile! Kirsty, with animal protein I’m a pretty picky. I buy at butchers where I trust in the quality. In my opinion there is a huge difference in taste and quality when it comes to animal protein. Grains and veggies I’m more lenient but never with animal protein. The cheapest way to get high quality meat is share a whole animal with friends or neighbors. The bacon we eat is from a pig I share with another 2 families. Once a year I get 1/3 and freeze it all. The bacon is incomparable to any grocery store bacon. I’d rather it less often.

I have been making pancakes with coconut flour and my husband eats them and doesn’t mind them, but doesn’t love them. I made them with almond flour way back and they were much more satisfying. I live in the Caribbean, so many things are hard to find, but they are making Casava flour, breadfruit flour, pumpkin and green banana flour and I can get chick pea flour which has been good! I would love to try the pumpkin flour in pancakes, but not sure if I would use it the same way you have used the almond flour in this recipe?

These did taste amazing, however I am one of those that cannot get these to stay together to flip them. If I waited long enough to flip without it being a scrambled mess, they were black. Should I try a lower heated skillet for a longer time? Or possibly I am not using enough oil in my skillet? My husband and I both ate them….even scrambled they tasted wonderful. It’s natural to want crunchy foods, but on Paleo you won’t want to subject yourself to many of the crunchy options out there. In this recipe they are coating a snapper fillet with sesame seeds, so you will get the delicate texture of the fish juxtaposed with the crunchy sesame seeds, all fried up in grass fed butter.
