I used a heaping spoonful of crunchy peanut butter and a small banana (about half a normal banana) with an egg and cinnamon. I mashed it up with a spoon in a bowl and put it on a heated nonstick pan with butter on it. I used a small, thin pan over the lowest setting on the smallest gas burner we have. No problems with burning, sticking, or flipping here. They were dense, thin, and tasted like fried peanut butter! My picky non-paleo man seemed to enjoy them with his nutella. They started breaking apart when I added some shredded coconut. I think I’ll add more egg or egg white next time or maybe some baking powder to make them fluffier. Possibly baking would be better. I used cashew butter. . The batter was really thick so I added one more egg. I found that smaller dollaps of batter cooked a little bit more easily and the ones that were thinner tended to cook more evenly. I’m looking forward to playing with these more! Hey Tessa! Good question. So after calculating from my credit card, I spend about $275 on average on food without really budgeting. I stick to eggs and chicken as my main form of protein and look for when grassfed beef is on sale. Even at $7 a pound I can get about 3 meals out of that, so it’s not too bad. I will probably be doing a post on this in the next few months when I get back to school and am keeping track of exactly how much I spend on what.
I’m wondering if it was your pan. Makes a big difference when you need to flip something. Actually, sometimes it makes all the difference. And seeing how so many other people had a completely different experience, I’d be willing to bet that’s probably what it was. My FAVOURITE paleo pancake recipe ever! During a paleo challenge in September last year, a very similar recipe was posted on our group page. They were delicious and they have become a common weekend breakfast for me. In fact, I was having them so often, I had to force myself to have a break from them! They’re absolutely delicious with fresh or frozen blueberries, raspberries & strawberries drizzled with coconut cream. However, I still cannot bring myself to add bacon to pancakes. Being Australian, I’d never heard of bacon served with pancakes until finding the various paleo blogs! Now I hear it’s a common American breakfast?!
My children love these and they don’t even care that they are eating something healthy. I like to make 2-3 pans of them and save them for later. They can be eaten just like potato chips if you want to. These zucchini chips are a great snack but they can also be a great side dish vegetable for dinner. Just don’t cook them until they’re crispy. I cook mine for about half an hour for a side dish. Sometimes I like them without all the spices so I just leave out the curry powder and garlic powder. I also think they are best when I use Course Real Salt.

We have a legit Indian roti pan and I’ve been asked several times over the years by friends and family where to find a “roti pan” or if they can just use their cast iron skillet? It uses plenty of chicken thighs, so you’ll be all set in the protein department. It also contains plenty of spices like allspice, cloves, and saffron.
