She spit them out because she said they had a”sour” taste. I didn’t notice at first but when I went back and tasted, there was a very distinct bitter note on the finish of these pancakes. Once I noticed it, it stood out big time. Any ideas on this flavor? I was thinking it was the tapioca starch as we are new to this ingredient and seemed to be the only culprit. It is from Bob’s red Mill.

So about the recipe… You have to buy the Paleo wraps online or if you’re from my area (Mandeville, Louisiana), my friend at Vive sells them. I’m not always a huge fan of buying Paleo products, but 1) these are only made of coconut, so they’re super healthy and 2) these are SO good and will give you so many new options for lunch. After you buy the wraps, make the chicken salad and use a Paleo mayo recipe. Do not get lazy about the Paleo mayo and buy store-bought; the Paleo mayo is much better. Mayo can be tough if you don’t follow directions. Happy lunch-making! This was my first time making a recipe like this. I was skeptical at first that pancakes could be made without flour so I made 3 different types of pancakes for brunch (hedging my bets that my everyone in my family would like at least one kind). The other 2 types had flour so I can say the texture of these are slightly different but not much. These were actually very good and very filling. Great recipe!

I feel like my family kind of walks the paleo line once in a while- but only because it is conveniently gluten free 100% of the time! But a lot of the paleo baking leaves something to be desired… which probably why I keep your blog in my “favorites” line on my internet tab. :) I love trying out new things- especially when it boasts of making my mornings a little easier (I love pre-cooking/baking and thawing for breakfast!)… So I think these need to go in my “to try” pile! These are delicious!! I’ve made a similar recipe that used almond flour instead of almond butter, and they were pretty good, but these are way better, especially the texture. I had no problem with them burning or being gooey in the middle. The only alteration I made was I added a little bit of pure vanilla extract & a little bit of cinnamon. My new go-to breakfast! These are delicious! I didn’t have any coconut flour so I used 1/4 of all plant protein powder and they turned out great. I did separate the egg whites and beat them separately. I couldn’t believe how light and fluffy they were, although they were pretty delicate and wanted to fall apart. Best stuff ever. I swear. There’s so many different HEALTHY flavors of jerky and meat sticks and even ones for kids! I love their traditional beef jerky and I can’t stop eating the cilantro lime flavored sticks. The date and rosemary flavor is pretty freaking amazing as well.
