FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! Oh also…just in case anyone doesn’t have arrowroot or tapioca starch…whole root cassava works just as well. Have even added gelatin the past 2 times and they worked well. The do seem to brown quicker, and I’m not sure if it’s the cassava or gelatin causing this.. But I like them like that!

They looked weird and terrible. I don’t think like that anymore since I’ve gotten to know them. You can either choose them when they are on the yellow side or the green color side. The only difference is that the yellow ones are riper and therefore sweeter. The green ones are less ripe and won’t taste as sweet. That choice is just up to your preference. The yellow ones are a little harder to work with because they are more sticky. I do recommend green but you should experiment and have fun. I just made these for my 3 kids and they gobbled them up! I added chocolate chips and made the pancakes about 2 inches in diameter. They were a bit difficult to flip and turned brown quickly, but they still tasted great. We did use a little maple syrup but didn’t use nearly as much as we have with regular pancake mix. I loved that this is a high-nutrient, kid-friendly breakfast. Do you have any suggestions for subbing the coconut flour with a different (nut-free) flour? My daughter could taste the coconut so I’d like to try a different flour next time.

Hello. I tried this recipe this morning. I new to this paleo/gluten free lifestyle, so this was a nice test of something different to replace pancakes, which I love, but which my body hates. I found them very crepe like as well. Almost like the French part of Frech Toast. I added a tsp of vanilla extract, and a little salt. I look forward to experimenting with this for sure. Next time I will use really ripe banana’s, no cinnamon and add pecan. I also used a cast iron skillet which might just get to hot for these delicate pancakes. But low and slow seemed to do the trick.
