When I first developed this recipe for Paleo pancakes, I used a tiny bit of coconut flour rather than tapioca starch/flour for structure. The batter was thicker, especially as it sat out, as coconut flour has that tendency, and it was almost impossible to make smaller pancakes. My children love these and they don’t even care that they are eating something healthy. I like to make 2-3 pans of them and save them for later. They can be eaten just like potato chips if you want to. These zucchini chips are a great snack but they can also be a great side dish vegetable for dinner. Just don’t cook them until they’re crispy. As I started my search for a good paleo pancake recipe it was daunting since there are so many reports of pancakes that don’t taste very good and fall apart. However, based on all the positive reviews I decided to give your recipe a whirl and am so glad I did! These turned out great and couldn’t have been more easy or quick to make. I love the simplicity of the ingredients – all things that most paleo eaters have on hand without leaning on a lot of substitutions. The texture is quite different from a regular pancake; but is still very satisfying. They behaved beautifully and I had no issues when flipping them. I cooked the first half in coconut oil and then switched over to grass fed butter – both ways yielded good results, and they brown a bit more with the butter. It made 2 generous servings – although it could have easily fed three. I’m so pleased to have stumbled upon your recipe, it’s a real winner! Thank you.
