Making these for the first time right now! I was so excited to get them in the pan I forgot the cinnamon. I am a paleo beginner and I have to say these were amazing and so simple. I LOVE banana bread and since starting paleo last week I have really been missing my breads. I was getting sick of eggs, veggies, and almonds so I turned to the internet and was very pleased to find these. We have a legit Indian roti pan and I’ve been asked several times over the years by friends and family where to find a “roti pan” or if they can just use their cast iron skillet? If you’re craving toast or bread, you probably need more nitrogen. You can get that from high protein meats and fish. Don’t think of meat as a “snack”? Make some jerky. Even if you don’t have a dehydrator you can still make jerky. All you need to make jerky is a bit of time, some mild heat, and a dry environment. If you’ve been buying jerky, save yourself some loads of cash and make it yourself!
So about the recipe… You have to buy the Paleo wraps online or if you’re from my area (Mandeville, Louisiana), my friend at Vive sells them. I’m not always a huge fan of buying Paleo products, but 1) these are only made of coconut, so they’re super healthy and 2) these are SO good and will give you so many new options for lunch. After you buy the wraps, make the chicken salad and use a Paleo mayo recipe. Do not get lazy about the Paleo mayo and buy store-bought; the Paleo mayo is much better. Mayo can be tough if you don’t follow directions. Happy lunch-making! I wanted to cook the rest of the batter, but didn’t really want to attend to the stove, so I experimented and threw a few in the oven on a buttered cookie sheet at 350. The batter ended up spreading into one thin megapancake, which was sad until I realized that I basically have crepe makings. These zucchini rolls look so good you might not want to eat them. But you will! They’ve got a really unique list of ingredients that includes bacon, goat cheese, and sun-dried tomatoes, so you’re getting vitamins, minerals, protein, and more from each item used. Even the roll itself is nutritious, because it’s made from zucchini. These roll up into nice bite sizes which makes them great for solo popping or for serving to company. They’re also very easy to make, it’s just a matter of laying out the ingredients and then rolling them up.
These pancakes are great, just like all of your recipes. One thing I noticed though is that there isn’t enough acid in the recipe to neutralize the baking soda. This is probably why so many people have a soapy baking soda aftertaste. A lot of people don’t seem to realize that when you are using baking soda The recipe has to have an acidic ingredient like lemon juice, vinegar, buttermilk, molasses or chocolate in it. I used baking powder instead and it turned out great.
These dogs are not actually hot dogs, but are Cajun spiced sausages. You wouldn’t want to eat hot dogs on Paleo because it’s not in line with the Paleo philosophy, even though it does seem to be a meat item. Paleo is about getting back to natural foods, which is why you want to make sure you choose high quality ingredients at all times. These mini dogs have plenty of cauliflower to make them a complete meal, but because of their smaller size they are best used as a snack.
