I am a paleo beginner and I have to say these were amazing and so simple. I LOVE banana bread and since starting paleo last week I have really been missing my breads. I was getting sick of eggs, veggies, and almonds so I turned to the internet and was very pleased to find these. Absolutely the best chicken ever, even the breast meat was moist! It's the only way I'll cook a whole chicken again. Simple, easy, quick, no mess - perfect every time. I've used both stainless steel and cast iron pans. great and easy technique for “roasted” chicken. I will say there were no pan juices, just fat in the skillet. Will add to the recipe rotation. Good for family and company dinners too. I've done this using a rimmed sheet pan instead of a skillet and put veggies and potatoes around the chicken for a one-pan meal. Absolutely amazing! I love your recipes and this one will definitely be a staple for a family weekend breakfast. I have made this recipe using tapioca flour and today, with arrowroot flower. My preference is arrowroot flower. Tapioca flour has it’s place in some recipes but it can lead to a gummy texture, mainly in the middle of whatever it is I’m making. Arrowroot flour made these taste just like the real thing. My husband, who would put extra gluten on food (his running joke) was convinced these were the real thing. I think I’ll start using arrowroot flour for all of my recipes that call for tapioca. Ashley, do they always interchange so well?
