Well I didn’t have any egg whites on hand so I went forward with sweet potato purée and to my surprise they were great! My husband who is not full time on the paleo diet and remembers “regular” pancakes agreed with me heartily when I said “it’s amazing how pancake like these are.” Our toddlers are allergic to cinnamon so we used allspice and nutmeg. 1/4C of sweet potato purée per egg. I have to admit the toddlers were not sold on them until we added raisins in our latest batch, but I think they’re asserting independence more than expressing true opinions haha. Hello. I tried this recipe this morning. I new to this paleo/gluten free lifestyle, so this was a nice test of something different to replace pancakes, which I love, but which my body hates. I found them very crepe like as well. Almost like the French part of Frech Toast. I added a tsp of vanilla extract, and a little salt. I look forward to experimenting with this for sure. Next time I will use really ripe banana’s, no cinnamon and add pecan. I also used a cast iron skillet which might just get to hot for these delicate pancakes. But low and slow seemed to do the trick. Thanks for posting this! It makes it so much easier to transition to healthy grain free eating when you have great recipes like this!

Absolutely the best chicken ever, even the breast meat was moist! It's the only way I'll cook a whole chicken again. Simple, easy, quick, no mess - perfect every time. I've used both stainless steel and cast iron pans. great and easy technique for “roasted” chicken. I will say there were no pan juices, just fat in the skillet. Will add to the recipe rotation. Good for family and company dinners too. I've done this using a rimmed sheet pan instead of a skillet and put veggies and potatoes around the chicken for a one-pan meal. Broccoli gets nicely browned and yummy!

the flavor of these is amazing!!!!!! But… the consistency created a big issue.. they were so thin that i kept burning them/not cooking the middle all the way through. I flipped too early or too late.. it was kind of a mess in my kitchen this morning. Half way through I added almond flour to try and thicken them up.. no dice! I still ate them because they were tasty, but not easy to execute. Any advice?!
I made these this weekend. They were great. I added some sliced strawberries to top them and in between the short stack of pancakes. Delicious! My wife loved the flavor, but found the texture to be a little odd.I am thinking about adding a 1/4 cup of almond flour to give them a boost in the texture department. All in all, I thought they were great!
FYI Scott Madden the Paleo diet is really just a general blueprint and most people just do the best that they can–some also just eat according to what they can handle or need and still consider it “paleo.” There are also many different options when it comes to protein powder (many people use pea, hemp etc) and not all of them contain wheat, soy, casein or whey.

These are wicked amazing!! I made them the first time, as is, just cut the recipe down to 1/3 so it made 3 small pancakes for just me. As is they were great – really filling (I could hardly finish them all and that’s a rarity for me and pancakes) – but a bit too sweet! I followed the ingredients to a T so I was surprised by the sweetness. I made them this morning but with chunky, organic Peanut Butter instead and added 1/4 tsp salt (because I think pancakes should be a hint salty), 1/4 tsp vanilla and 1 tsp chopped walnuts. Hi, I was wondering if anyone has made these without eggs? They sound great but I am allergic to egg yolks. I was thinking of substituting sweet potato purée as that was recommended as an egg substitute for baking on another site, but wasn’t sure how that would work in a flourless recipe sweetened with bananas. I want to keep it as close to the original as I can with my allergies! We love sweetening things with bananas…any thoughts?
Remove the meat from the marinade and lay it out on your counter on top of some paper towels. The goal is to get it as dry as possible. Lay paper towel over top and pat it dry. Now’s the time to put it into your dehydrator or oven. You can thread the meat onto wooden skewers (near one end of each piece) and lay the skewers perpendicular to the oven wrack’s bars (use the top shelf). Make sure the meat hangs down. Place cooking sheets lined in foil beneath the meat to catch any drips.
I always cook a tray of bacon in the oven while the pancakes are on the griddle, and then we make sandwiches with bacon and maple butter. The kids love them for school lunches or afternoon snacks! I used cashew butter. . The batter was really thick so I added one more egg. I have searched for a long time for a recipe like this without the eggs. I have tried some alternative pancake recipes but they never come close to the real thing. Having food sensitivities sucks.
