Hi I am back! I just thought I’d share this with you. I am pre-diabetic. This morning, I was intent on making your pancakes, and I did, shared with my sons. I did not check my blood sugar before, but I thought I’d check it around two hours after. (It’s been 2-1/2 hrs, I believe). I still am full (ate 6 of them pancakes topped with butter and real maple syrup). I expected to see around 110++ because of the bananas, nuts, and maple syrup. Guess what? 99!!! and I am still full. But I gotta keep trying to eat 3 meals a day. Maybe light lunch in another hour… :)
I realize that this is the silliest question and maybe it relates to the mushy question someone else had. I tried making these about a month ago and had an awful hard time flipping them without them either sticking to the turner or them breaking all apart on me. How can I get them to turn like those inflammatory pancakes that people make (very easy)?

So about the recipe… You have to buy the Paleo wraps online or if you’re from my area (Mandeville, Louisiana), my friend at Vive sells them. I’m not always a huge fan of buying Paleo products, but 1) these are only made of coconut, so they’re super healthy and 2) these are SO good and will give you so many new options for lunch. After you buy the wraps, make the chicken salad and use a Paleo mayo recipe. Do not get lazy about the Paleo mayo and buy store-bought; the Paleo mayo is much better. Mayo can be tough if you don’t follow directions. Happy lunch-making! I always cook a tray of bacon in the oven while the pancakes are on the griddle, and then we make sandwiches with bacon and maple butter. The kids love them for school lunches or afternoon snacks! Sometimes I just don’t want the banana flavor either. So I decided that processing other fresh fruits/vegetables to the consistency of applesauce would give me some variety. The mildest I have tried so far are apples and zucchini. The eggs really provide the structure, so if it’s a little juicy, like pineapple, you may want just a bit more egg than fruit, and a good hot pan to keep them from spreading too much. However, I have also realized (accidentally the first time) that I can make a thinnish one the size of my skillet, flip it, and have a nice wrap too. Just don’t cook it too dry or it splits like egg when you bend it. Extra coconut oil/butter in the mix helps that a little. Made with pureed homemade salsa, it’s fantastic with some seasoned ground beef, lettuce, tomato, sour cream. Made with pureed zucchini, the most versatile savory (spice it up!) one, I think, that is particularly good with mediterranean-spiced lamb and some garlic and cucumber in sour cream (I miss my shawarma). I’m still working with the ratios to get a wrap that consistently doesn’t break, so I can eat it like a tortilla/flatbread, but I usually end up eating it with a fork any way.
I think granola bars are pretty healthy so my kids and I eat them for snacks all the time. They aren’t just for breakfast anymore. These granola bars come together quickly and are so easy to make. Chopping the nuts is the most time-consuming part and you probably know that isn’t very hard. You can use whatever nuts you like or have on hand. You can forget the chocolate if you’d like.

Kirsty, with animal protein I’m a pretty picky. I buy at butchers where I trust in the quality. In my opinion there is a huge difference in taste and quality when it comes to animal protein. Grains and veggies I’m more lenient but never with animal protein. The cheapest way to get high quality meat is share a whole animal with friends or neighbors. The bacon we eat is from a pig I share with another 2 families. Once a year I get 1/3 and freeze it all. The bacon is incomparable to any grocery store bacon. I’d rather it less often.

I make your old version with coconut flour frequently, but I just put it in a cake pan or jelly roll pan and bake it with a few add ins if I’m feeling generous. Show me a child that refuses cake for breakfast because I don’t think they exist, definitely not in my house anyway! I can’t wait to try this with tapioca instead, because the whole reason I baked it was because I couldn’t fry them up quick enough.

Well I didn’t have any egg whites on hand so I went forward with sweet potato purée and to my surprise they were great! My husband who is not full time on the paleo diet and remembers “regular” pancakes agreed with me heartily when I said “it’s amazing how pancake like these are.” Our toddlers are allergic to cinnamon so we used allspice and nutmeg. 1/4C of sweet potato purée per egg. I have to admit the toddlers were not sold on them until we added raisins in our latest batch, but I think they’re asserting independence more than expressing true opinions haha. They loved them with raisins! Oh, I also added a bit of flax meal. I might try them again with egg whites or some egg whites some sweet potatoes (thanks Jody!) just because ours were not as filling as others have mentioned them being. We also followed the commenter below by baking them at 400F for 10-12 minutes rather than using a pan. Anyway I know I made a lot of modifications but thanks George for the great basic recipe! They are easy and convenient and I don’t miss the old kind of pancakes one bit when I’m eating them!

I am so, so, so, so, so, so excited about this recipe!!! The hubs and I love to have pancakes on Saturday mornings, but they really can blow your entire day if you are a calorie counter and aren’t careful. The added flours are just so calorie rich! I don’t necessarily follow one specific diet, but I have been trying really hard to cut out processed foods and the Paleo guidelines fit really well with that. Plus you get to eat *MEAT* which I could never, ever, ever live without. I am a paleo beginner and I have to say these were amazing and so simple. I LOVE banana bread and since starting paleo last week I have really been missing my breads. I was getting sick of eggs, veggies, and almonds so I turned to the internet and was very pleased to find these. You do have to be patient though! but man, they are just what I need for a breakfast on the go. I also made the muffins that one of the comments suggested and they were great as well! You can’t eat them warm, because they taste like banana flavored quiche, but I let them cool completely and I could not tell a difference between them and my favorite banana bread recipe. LOVE it! I used a heaping spoonful of crunchy peanut butter and a small banana (about half a normal banana) with an egg and cinnamon. I mashed it up with a spoon in a bowl and put it on a heated nonstick pan with butter on it. I used a small, thin pan over the lowest setting on the smallest gas burner we have. No problems with burning, sticking, or flipping here. They were dense, thin, and tasted like fried peanut butter! My picky non-paleo man seemed to enjoy them with his nutella. They started breaking apart when I added some shredded coconut. I think I’ll add more egg or egg white next time or maybe some baking powder to make them fluffier. Possibly baking would be better. Very good recipe, since it’s hard for me to get a recipe to turn out well. :)
the flavor of these is amazing!!!!!! But… the consistency created a big issue.. they were so thin that i kept burning them/not cooking the middle all the way through. I flipped too early or too late.. it was kind of a mess in my kitchen this morning. Half way through I added almond flour to try and thicken them up.. no dice! Now, there are lots of people who feel iffy about snacking. And I get that. The snacks many of us were brought up and traditionally reach for (animal crackers, pretzels, cheese flavored crackers) are kind of just filling up the belly instead of actually feeding the body what it is actually asking for...which is nutrients and protein! Since moving our family to a mostly-Paleo way of eating a few years ago, our snacking game has totally changed!  Out with the starchy crackers. In with real food, nutrient dense nibbles! Nibbles that a little growing body will actually put to good use! That will actually keep them going until their next meal....with their sanity (and your's) intact.
Hey Amanda, I’d love to try this as well. I’m not sure if they will freeze well, but I don’t see why not. I think freezing the chicken salad would be smarter, and taking that out on a Sunday and just packing those up for the week and storing in the fridge may be better. FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! We’ve been Paleo-ish the past couple of years but with another baby due any day, I’ve been thrilled to find your blog and cookbooks. Sometimes I don’t have the money to keep almond flour on hand and my homemade version doesn’t have the lovely crumb bc it’s not as fine. My 3YO sometimes wants what her older siblings are having. We all tolerate rice flour well and your recipes have been awesome. I think it’s also because you aren’t shy about advising us to use a scale rather than volume measurements. My nonGF husband LOVED the pretzel rolls. (Yeah, I was too lazy to do the pretzel dogs and just made the rolls.) OMG! You so totally rock! I definitely want the new cookbook, too. I hate spending $2 extra to get a GF bun for me and my two kids while eating out or $1.25 for a frozen ok bun. Making a pizza crust from cauliflower is something you just have to try if you haven’t yet. You’ll be surprised that a vegetable can double as a pizza crust, and even more surprised to learn that it actually tastes good. This pizza makes use of bacon, so it has an unfair advantage on your taste buds. There’s also spinach as a topping, so you’re definitely covered in the vegetable department.
