These are the best gluten free pancakes I’ve ever had… and maybe the best pancakes ever, period! They are so good! I added an overripe banana and decreased the coconut milk a tad to keep the consistency right. I topped them with whipped coconut cream and fresh strawberries. OMG. I make your old version with coconut flour frequently, but I just put it in a cake pan or jelly roll pan and bake it with a few add ins if I’m feeling generous. Show me a child that refuses cake for breakfast because I don’t think they exist, definitely not in my house anyway! I can’t wait to try this with tapioca instead, because the whole reason I baked it was because I couldn’t fry them up quick enough.
Oh, that’s weird. Maybe you are reacting to something your weren’t eating before starting this diet? I suggest trying to write down everything you eat and how you feel after every meal and about an hour after the meal and then try find a pattern for the bloating. It took me a while for example to figure out I react with horrible heartburn when I eat tomato sauce. Anything containing tomato sauce is super hard for me to digest.
FYI Scott Madden the Paleo diet is really just a general blueprint and most people just do the best that they can–some also just eat according to what they can handle or need and still consider it “paleo.” There are also many different options when it comes to protein powder (many people use pea, hemp etc) and not all of them contain wheat, soy, casein or whey.
