I used a heaping spoonful of crunchy peanut butter and a small banana (about half a normal banana) with an egg and cinnamon. I mashed it up with a spoon in a bowl and put it on a heated nonstick pan with butter on it. I used a small, thin pan over the lowest setting on the smallest gas burner we have. No problems with burning, sticking, or flipping here. They were dense, thin, and tasted like fried peanut butter! My picky non-paleo man seemed to enjoy them with his nutella. They started breaking apart when I added some shredded coconut. I think I’ll add more egg or egg white next time or maybe some baking powder to make them fluffier. Possibly baking would be better. Very good recipe, since it’s hard for me to get a recipe to turn out well. :)
I only used one banana, one egg, and scraped the bottom of my natural almond butter, a dash of cinnamon, and they were great. I would make the full size if I was feeding my husband too but I just wanted to say that if you want to make just enough for yourself it still works great. We have a legit Indian roti pan and I’ve been asked several times over the years by friends and family where to find a “roti pan” or if they can just use their cast iron skillet? OK George so I finally found a recipe easy enough to try and all I can say is “All I Want For Christmas is a Blendtec!” I’ve been wanting to make my own nut butters but a regular old food processor does not do the trick. So I improvised and used almond meal. I also can’t eat that many pancakes so I used 2 bananas 2 eggs and 1/2 C almond meal. Then some stuff like ginger, nutmeg. They tasted great but fell apart. Amazed this recipe works out as well as it does. Would not have thought that the amount of time under the broiler would have produced a very juicy and favorable chicken with a very crispy crust. Used my 12" Lodge Cast Iron skillet (which can withstand 1000 degree temps to respond to those who wondered if it would work) and it turned out great. A "make again" as my family rates things. Hey Tessa! Good question. So after calculating from my credit card, I spend about $275 on average on food without really budgeting. I stick to eggs and chicken as my main form of protein and look for when grassfed beef is on sale. Even at $7 a pound I can get about 3 meals out of that, so it’s not too bad. These chips aren’t actually made from anything except the cheese. It’s asiago cheese, a hard cheese that doesn’t contain much lactose and is therefore looked upon as OK by some Paleo followers. These sweet potato chips do a great job of filling in for regular potato chips. They have the same texture you’re looking for, both as you pick them up and once you put them in your mouth. The sea salt ensures that they’re salty enough to satisfy, and the rosemary gives them a distinct flavor that really plays well with the sweet potato.
