Hi Monica! I love your site! I’m 22 years old and also from Mandeville, LA! I’m looking into healthier eating ideas so I can help my parents and myself lose some unwanted pounds! They are very hard to motivate to eat healthier and I think the best way to help them would be to cook for them. (I’m in nursing school at LSU and living at home so I think this is the best time to help them with a much needed change)! I’m not a big fan of mayo but I was wondering if this Paleo version was healthier/tastier than regular store bought mayo? Or if you had any other ideas for things I could replace mayo with for this recipe? I’m going to have to go to Vive soon! I’ve seen it a million times and have never stopped in! Thanks so much!!
As some of you know, I worked for Laura Fuentes at MOMables last summer. I like to say she gave me the “Blogging for Dummies” course. She had it down, but she needed an intern and I wanted to learn. But on Paleo you won’t be eating anything that contains refined sugar, so they have to get their sweetness from a natural source. In this case they’re banking on the sweetness of watermelon, and using honey as a backup if the watermelon isn’t sweet enough. The sour flavor comes from lemon, a very creative way to reproduce a popular candy choice. The gelatin is grass-fed, an important consideration that keeps this recipe within the confines of the Paleo way of eating.
The coconut flour and the bit of coconut oil you use to fry up these babies won’t give you an overwhelming flavor of coconut – the coconut flavor is so mild that you probably wouldn’t notice it if you didn’t know. But since you do know, you might pick up a hint of that. But of course, the little bit of coconut flavor goes spectacularly well with the flavors of banana and cinnamon.

If you’re looking for a beef Paleo dish that comes out looking fantastic, like something you’d want to serve company, you’ll want to go with this braised bottom round roast. It is made with a whopping 3 pounds of grass fed beef bottom round, and has plenty of sweet potatoes, so you’ll be getting the fiber needed to help all of that meat make it through your system. An onion is added for good measure, and there are plenty of sage leaves used for flavor. Hey, great recipe and site!! FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! I use grapeseed oil because the olive oil is a bit bitter for me.

*Sometimes instead of regular guacamole, I’ll make “guacachoke dip”, which is this: take a large can of artichoke hearts, an avocado, a quarter cup of lime juice, a pinch of cumin, and a pinch of chile powder and mix it up in a blender or food processor. You can add olive oil or coconut milk to make it creamier if you want. This little creation is amazing and can be served with pretty much any meat or veggie. Yum :)
Isn’t it awesome just how many foods you can have with Paleo. There’s virtually nothing that’s off limits as long as you’re using the right ingredients. In this version of the classic chocolate cream pie, the regular crust has been replaced with an almond-based crust so you’ll get more fiber and protein from the crust that you would with any flour-based crust. The chocolate is from cacao paste and isn’t filled with dairy or refined sugar. A perfectly chocolatey and healthy pie!
I made these amazing pancakes they were amazing! the whole family loves them! I have tried fancy variations replacing the applesauce with pumpkin and adding pumpkin pie spice. and to make this even more decadent I have topped it with whipped coco cream!
