This recipe is using grass-fed ricotta cheese stuffed into strawberries, which are then wrapped in proscuitto. The ricotta cheese will be an issue for those strictly following the no dairy rule, while others may choose to give it a pass because it comes from grass-fed cows. Many food items on Paleo fall into a gray area, and it is up to the individual to decide how far they want to take it, and how their body processes these types of foods. You end up getting a meaty, fruity, cheesy mouthful, which is sure to make a great snack or appetizer for a party.
When I first developed this recipe for Paleo pancakes, I used a tiny bit of coconut flour rather than tapioca starch/flour for structure. The batter was thicker, especially as it sat out, as coconut flour has that tendency, and it was almost impossible to make smaller pancakes. By replacing the coconut flour with a Paleo-friendly starch, the pancakes still have structure but the batter is more flexible.
Tacos can be tricky to make Paleo, but they’ve figured out a good way here by using portobello mushroom caps for the shells. My preference is arrowroot flower. Tapioca flour has it’s place in some recipes but it can lead to a gummy texture, mainly in the middle of whatever it is I’m making. Arrowroot flour made these taste just like the real thing. My husband, who would put extra gluten on food (his running joke) was convinced these were the real thing. If you thought pulled pork sliders were off the menu, you were wrong. You just have to find creative workarounds when you are making Paleo recipes. In this case they’ve replaced hamburger buns with sliced sweet potato, which gets the wheat out. They haven’t skimped on the pulled pork which is going to taste just like you’d expect it to if you ordered a pulled pork sandwich from a barbecue joint. Creativity is one of the main and factors when you are eating Paleo because nothing is really off limits, you just have to figure out how you can have it.

I’ve tried making paleo pancakes before with okay results, but this recipe is fantastic! These pancakes taste and look like white-flour pancakes. But I was missing that extra buttery taste from the pancake, so next time, I’ll melt about a tablespoon of ghee and add it to the batter as well as add an extra 1/2 teaspoon of baking powder, because I love insanely buttery, thick pancakes.
*Sometimes instead of regular guacamole, I’ll make “guacachoke dip”, which is this: take a large can of artichoke hearts, an avocado, a quarter cup of lime juice, a pinch of cumin, and a pinch of chile powder and mix it up in a blender or food processor. You can add olive oil or coconut milk to make it creamier if you want. This little creation is amazing and can be served with pretty much any meat or veggie. Yum :)
