The Paleo Diet allows in moderation natural sweeteners like honey and maple syrup. You can’t go wrong adding a touch of these natural sweeteners to enhance the flavor and tenderness of the pancake. However, if you want a more golden brown surface color, honey is the solution. The simple sugars, glucose and fructose, and amino acids in the honey cause the Maillard Reaction to occur when the pancake batter cooks, creating a more rapidly brown surface.

FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! I use grapeseed oil because the olive oil is a bit bitter for me.
Tacos can be tricky to make Paleo, but they’ve figured out a good way here by using portobello mushroom caps for the shells. These caps do a good job of holding all of the yummy taco-inspired ingredients, and by the time you finish one of these you’ll feel satisfied, and like you just had Taco Night. Yes, the egg is raw, and raw egg is perfectly safe to consume, so long as you trust the source of your eggs. Anything you buy from a grocery store should be set, and if you get them from the Farmer’s Market or grow your own, just make sure you wash the shell VERY WELL before using raw egg, as this is where most of the contaminate comes from. I only used one banana, one egg, and scraped the bottom of my natural almond butter, a dash of cinnamon, and they were great. I would make the full size if I was feeding my husband too but I just wanted to say that if you want to make just enough for yourself it still works great. Hey Amanda, I’d love to try this as well. I’m not sure if they will freeze well, but I don’t see why not. I think freezing the chicken salad would be smarter, and taking that out on a Sunday and just packing those up for the week and storing in the fridge may be better. The wraps probably don’t freeze well. But for most of my once a month cooking, it always requires a bit of assembling the week of! Does that make sense?

I make your old version with coconut flour frequently, but I just put it in a cake pan or jelly roll pan and bake it with a few add ins if I’m feeling generous. Show me a child that refuses cake for breakfast because I don’t think they exist, definitely not in my house anyway! I can’t wait to try this with tapioca instead, because the whole reason I baked it was because I couldn’t fry them up quick enough.

Making these for the first time right now! I was so excited to get them in the pan I forgot the cinnamon. I don’t have a skillet and didnt know what the equivalent of 350* was on my gas stove top so I did them in a sauté pan on (2 to 3-low) and they came out great.
