I made these this weekend. They were great. I added some sliced strawberries to top them and in between the short stack of pancakes. Delicious! These are excellent. My sister is eating Paleo and loves them. I love them because my husband and I are diabetic and these are very low in carbs. They have a nice banana-bread flavor and are so easy to make and keep quite well. I am going to add some cinnamon and nutmeg to them to see how enhancing that flavor impacts it. I might also add some finely chopped walnuts for the same reason.

When I first developed this recipe for Paleo pancakes, I used a tiny bit of coconut flour rather than tapioca starch/flour for structure. The batter was thicker, especially as it sat out, as coconut flour has that tendency, and it was almost impossible to make smaller pancakes. *Sometimes instead of regular guacamole, I’ll make “guacachoke dip”, which is this: take a large can of artichoke hearts, an avocado, a quarter cup of lime juice, a pinch of cumin, and a pinch of chile powder and mix it up in a blender or food processor. Broccoli gets nicely browned and yummy!

These did taste amazing, however I am one of those that cannot get these to stay together to flip them. If I waited long enough to flip without it being a scrambled mess, they were black.
