I have been eyeing the paleo lifestyle for a while now (not yet completely wheat-free because my hubby planted and harvested wheat last year so I am obliged to bake some whole wheat bread), and I have been on a HFLC diet most of the days. I have been considering taking the plunge to a paleo lifestyle with occasional high-carb indulgences using paleo-approved ingredients with the addition of raw milk/cream/butter. This morning was my first wheat-free pancake using your recipe, but adding some BSoda and BPowder, and separating the egg white to whip it up first before folding into the rest of the batter (hoping to make them fluffier; not sure if they made any difference). They turned out great, but like you said, make them small enough (my first batch turned out quite big still, I had a hard time flipping them without breaking) and I had to cook on low for long periods, esp that one side to make sure the middle cooked). Slathered homemade butter from grass-fed cows and poured homemade (by in-laws) maple syrup. My sons loved them too, although I burnt some (hard to control heat on a glass stove top). The half a banana in my portion I shared with my husband won’t hurt. Had Greek Yoghurt and strawberries with them and am full and satisfied. We’ve been Paleo-ish the past couple of years but with another baby due any day, I’ve been thrilled to find your blog and cookbooks. Sometimes I don’t have the money to keep almond flour on hand and my homemade version doesn’t have the lovely crumb bc it’s not as fine. My 3YO sometimes wants what her older siblings are having. We all tolerate rice flour well and your recipes have been awesome. I think it’s also because you aren’t shy about advising us to use a scale rather than volume measurements. My nonGF husband LOVED the pretzel rolls. (Yeah, I was too lazy to do the pretzel dogs and just made the rolls.) OMG! You so totally rock! I definitely want the new cookbook, too. I hate spending $2 extra to get a GF bun for me and my two kids while eating out or $1.25 for a frozen ok bun. Thanks to you we can eat at home and still have awesome breads and desserts for a fraction of the cost. Thanks again. I will gladly add the new cookbook and will probably just pre-order it.
I feel like my family kind of walks the paleo line once in a while- but only because it is conveniently gluten free 100% of the time! But a lot of the paleo baking leaves something to be desired… which probably why I keep your blog in my “favorites” line on my internet tab. :) I love trying out new things- especially when it boasts of making my mornings a little easier (I love pre-cooking/baking and thawing for breakfast!)… So I think these need to go in my “to try” pile! My three kids and I just finished a double batch of these and LOVED them! I’ve tried so many paleo pancake recipes and they’ve never turned out as “normal” as these (usually really flat and take forever to cook). This was my first time making a recipe like this. I was skeptical at first that pancakes could be made without flour so I made 3 different types of pancakes for brunch (hedging my bets that my everyone in my family would like at least one kind). The other 2 types had flour so I can say the texture of these are slightly different but not much. These were actually very good and very filling. Great recipe!

I am so, so, so, so, so, so excited about this recipe!!! The hubs and I love to have pancakes on Saturday mornings, but they really can blow your entire day if you are a calorie counter and aren’t careful. The added flours are just so calorie rich! I don’t necessarily follow one specific diet, but I have been trying really hard to cut out processed foods and the Paleo guidelines fit really well with that.
