Absolutely the best chicken ever, even the breast meat was moist! It's the only way I'll cook a whole chicken again. Simple, easy, quick, no mess - perfect every time. I've used both stainless steel and cast iron pans. great and easy technique for “roasted” chicken. I will say there were no pan juices, just fat in the skillet. Will add to the recipe rotation. Good for family and company dinners too. I've done this using a rimmed sheet pan instead of a skillet and put veggies and potatoes around the chicken for a one-pan meal. I didn’t have tapioca flour, so I used arrowroot as others suggested. I made them with blueberries last night for dinner, and they tasted and looked like REAL pancakes. I saved the leftover batter and made some for breakfast and the batter held up fine overnight in the fridge. Not only are they delish, but they are very easy to turn over in the pan (unlike other paleo recipes). I don’t need to look any further for a great pancake recipe….this is it!

I am a paleo beginner and I have to say these were amazing and so simple. I LOVE banana bread and since starting paleo last week I have really been missing my breads. I was getting sick of eggs, veggies, and almonds so I turned to the internet and was very pleased to find these. You do have to be patient though! but man, they are just what I need for a breakfast on the go. I also made the muffins that one of the comments suggested and they were great as well! You can’t eat them warm, because they taste like banana flavored quiche, but I let them cool completely and I could not tell a difference between them and my favorite banana bread recipe. LOVE it! My suggestion for an on-the-go version: I keep my ripe peeled bananas in the freezer. In the morning before work, I break off a 4″ piece of banana, put it in a microwave safe glass bowl with 1-2 Tbl almond butter (or cashew if I am out of almond). Put that in the microwave for about 1 minute (microwave temps vary!). Pull it out and it is soft and easy to whip with a fork. Add 1 egg, whip again until incorporated. Add silver dollar sized rounds to a coconut oil greased cast iron skillet, and cook. Yum yum!

I had the same knee-jerk reaction as Susanne when I saw “bananas”. I love bananas, just not really banana pancakes. Ideally, if you have a good Paleo breakfast and lunch, you’ll often find you don’t feel hungry and don’t need to snack. If you do find yourself hungry between meals, try eating more at meals (are you consuming enough satiating fat in your meals?). I have tried banana pancakes, with just 2 eggs, a banana and then some cinnamon and vanilla, but….I find seems like the banana tends to overpower things a bit, not sure if I’m not used to or not or if using an organic one would make a difference, but it’s a little bit of an adjustment. Hi Kirsty, I recommend any diet that encourages clean eating and avoiding processed food. It doesn’t really matter which one. The more from scratch you cook the better. You can also talk to a trainer to work out some exercise specifically for fat burning just make sure to measure your belly/thighs or wherever you want to loose weight to NOT worry about weight but rather body shape. Muscle weighs more than fat so you might not loose weight but loose fat and become leaner. Diet and exercise go hand in hand. One won’t work without the other. Most importantly though….go you for carrying 3 human beings in your amazing body be kind to yourself and your body, it’s done a hell of a lot of amazing work :)
Rashid – check out my comment below (about the Tanka Bars – the spicy one that I like only has about 250mg or 11%DV – which isn’t too bad for “jerky” type snacks. Low fat and pretty low calorie too). I’m addicted to them! Costco online has the best deal if you buy in bulk. Otherwise, try Ebay, sometimes people sell them there in smaller quantities you can try (maybe Zupan’s or New Season’s Markets or Whole Foods might carry them as well??? – I’m not sure).

The coconut flour and the bit of coconut oil you use to fry up these babies won’t give you an overwhelming flavor of coconut – the coconut flavor is so mild that you probably wouldn’t notice it if you didn’t know. But since you do know, you might pick up a hint of that. But of course, the little bit of coconut flavor goes spectacularly well with the flavors of banana and cinnamon.

Well I didn’t have any egg whites on hand so I went forward with sweet potato purée and to my surprise they were great! My husband who is not full time on the paleo diet and remembers “regular” pancakes agreed with me heartily when I said “it’s amazing how pancake like these are.” Our toddlers are allergic to cinnamon so we used allspice and nutmeg. 1/4C of sweet potato purée per egg. I have to admit the toddlers were not sold on them until we added raisins in our latest batch, but I think they’re asserting independence more than expressing true opinions haha. They loved them with raisins! Oh, I also added a bit of flax meal. I might try them again with egg whites or some egg whites some sweet potatoes (thanks Jody!) just because ours were not as filling as others have mentioned them being. We also followed the commenter below by baking them at 400F for 10-12 minutes rather than using a pan. Anyway I know I made a lot of modifications but thanks George for the great basic recipe! I just found your blog. I will be checking back frequently in the future. I bought these wraps a long time ago and they are still sitting in my pantry. I make chicken salad almost weekly…I will have to try them in the wraps soon!!! Just a tip I am so thankful to have discovered. Paleo mayo becomes 30 secs in the making and SUPER EASY if you have an immersion blender! It was well worth my $15!! Just put all the ingredients you listed including the oil in a large mouth pint and a half mason jar put the blender to the bottom and blend! There is a video online somewhere.
