I just made these cookies, and like several other people, I ended up with flat pancakes–very oily. I could tell based on your description of scooping the batter and pressing down to form half circles and then tapping the batter out, etc., that the consistency was wrong even before I baked them. Much too sticky and moist to shape the batter at all. Is that 3 tablespoons of coconut oil correct? The only change I made was rice milk for almond milk. These cookies are soft and chewy, yummy and still healthy. I eat them all the time for snacks and dessert. One thing I really like about cookies is that they have an automatic portion control. That is unless you eat too many of them. I also like the convenience of cookies because you can grab them and go. Sometimes I eat these for breakfast because they are so healthy.
I love this recipe! I’ve been trying to make healthier desserts, and this was spot on. I brought it to work, and everyone loved the cookies and asked for me to make some more. I only used 1/3 cup of Swerve, and used 1/4 cup walnuts instead of pecans. Mine didn’t spread out as flat as yours. I was only able to make 16 cookies, but I also scooped it out with a 1-1/2 inch cookie scoop. I used Kirkland semisweet chocolate morsels, since it needed to get used up, and added 1 tsp of Instant dark roast coffee to bring out the chocolate. It was lovely, and only topped out at 105 cals per cookie, with the ingredients I used. I wonder if it’d still be good if I used coconut oil instead of butter. I just made these not even 20 minutes ago and they were DELICIOUS. It’s the first time I have ever baked paleo cookies and they came out great. I had to bake them a little longer because instead of putting them on parchment I put them in mini cupcake tins to make them into little portable bite sized snacks I added unsweetened coconut flakes to it because I love coconut flakes. I believe in parchment paper. It’s a DREAM for clean up and prevents burning. I hardly ever bake without it, and these ginger cookies are no exception. Some ginger cookies have a tendency to scorch on the bottom, and I’ve found that a light-colored baking sheet lined with parchment paper (or a silicone baking mat) is a fail proof plan for perfectly baked ginger cookies. Yes, you read that correctly. A real Paleo diet is not a no-carb approach to eating. Natural sweeteners like stevia and xylitol have been extensively studied and don’t impose health risks. Allulose and yacon syrup also appear to be safe according to research studies. If you’re feeling more adventuresome, though, and are willing to try some additional flours, I humbly recommend the holy grail of chocolate chippers: the New York Times-style gluten free chocolate chip cookies. They not only have a couple extra ingredients, but they must chill in the refrigerator before baking. But to say they’re worth the wait is a dramatic understatement.
With high amounts of heart-healthy omega-3’s, fish is a great form of protein to regularly include in a paleo diet. Select wild-caught fish to avoid ingesting the harmful chemicals that farmed fish are regularly fed. Both low-fat, white varieties of fish are considered paleo as well as high-fat fish such as salmon, tuna and mackerel and should both be included to satisfy your daily protein and fat requirements.
