I am not over weight. I am quite small actually. Maybe just need to tone up. I have severe fibromyalgia. After my doctor and I have done tons of research and learning more and more about it we found that I need to cut out a bunch of stuff that I consume to help lower my inflammation, exhaustion and digestive problems. Very frustrating. After more research I have learned that the Paleo “diet” is pretty spot on to how I know have to eat. I am so grateful to have a guidline to follow and not doing this alone. I am tired of being in chronic pain everyday all day. Along with other things I am doing to help my body be restored Paleo sounds to be a promising adventure. Yes I’m superstitious and so far I did the same thing to my body this time that I did last year. I never had issues training or running halfs so I’m seriously considering my reasons to marathon… I think if it were just me I’d run halfs. No on paleo diet but awesome cookies. My husband’s favorite and kids loved it too. Very crispy cookies. Used 1/2 cup of coconut oil to help it form better. Probably could have used a little less. Kids allergic to almond so used whole wheat pastry flour. Used Agave nectar 6 Tablespoons, added 1 tablespoon of chia seeds and 1 tablespoon of flax seed ground. By the way this is my favorite cookies. Next time I’ll try adding oats.
Tina, it is very true, and I also don’t want to go get my reading glasses, so I do grab the wrong one sometimes. One time I used curry spice instead of pumpkin spice, as the spice containers and colors were very similar, and when I realized my error, I thought my pumpkin muffins were going to be inedible. But they were actually not bad at all (not as good as the ones with pumpkin spice of course). 🙂
Alice, I’m sorry you weren’t pleased with this recipe. Assuming you didn’t omit or substitute any other ingredients, I imagine it’s due to your almond flour brand—although “cardboard” is hard to imagine unless maybe you left out the sugar? Almond flours are not all created equal and finely-sifted is definitely not the same as finely ground, which is why I specify. Condiments – mustard, fish good, quality vinegars such as Apple Cider with mother in it or aged Balsamic, olive oil mayonnaise, low sugar tomato sauces and paste, anchovies, olives, gherkins, capers, salsas and pestos – are all fine, just make sure no nasty chemicals and preservatives are added. Wheat free soy sauce such as Tamari and naturally derived oyster sauce are ok every now and again but it’s better to try something like coconut aminos.

I can see how a strict Paleo diet has its place in society for some people, but for me, a very under weight older person trying to gain at least 30 pounds to get back up to my normal comfortable weight, I will sprout quinoa and buckwheat, make my own gluten free breads, have the occasional red potato and rice, lentils and split peas and consume grass-fed and raw dairy products.

I made these for a weekend class, I used butter instead of coconut oil but otherwise followed the recipe as is. My recipe only made 16 cookies, not 24 and perhaps I ate a couple before they got to the class :) Anyway, I was so surprised when I had about 12 of the women come up to me to tell me how great they were. Mind you, it’s not a group that knows me except by name. I have never had such a big response to a recipe before. Will be making them for the class again next weekend and doubling the recipe. Because it came from an animal, practically all meats are paleo. However, it’s important to look for meats that are as natural as possible. With seafood, wild and sustainably caught is always best, as is sourcing your seafood from areas that are less likely to suffer from pollution and heavy metal contamination. Generally speaking, larger predatory fish are more likely to have higher levels of heavy metals than smaller fish and mollusks. Hi Anne- thank you for trying them! Coconut sugar in very low glycemic so it’s much better for blood sugar than traditional sugar (of course), but even honey or maple syrup. I do understand that some people have to have sugar free though. I’m not familiar with stevia and I don’t think it converts 1:1. I have had good luck with Swerve sweetener which does evenly convert in recipes and I would suggest she tried that. It’s found in the baking aisle and of course on Amazon. Hope that helps!

Wheat / sugar and simple carbs – have another effect apart from the inflammation effects called out by Paleo – that the carb is so simple it gets converted to glucose / sugar in your mouth by your saliva and continues that rapid absorption into the bloodstream. For those of us who are diabetics we have to take insulin to lower our blood sugar, for non diabetics the body releases a load of insulin quickly (which is also an irritant). too much glucose in the blood is what causes all of the complications for diabetics which are all associate with damage to blood vessels / organs / nerves by the glucose in the blood. Studies are showing that even non diabetics are getting the same damage in smaller doses over longer period (leads to heart attacks)

Nuts and seeds – these guys are nutritious but many nuts and seeds are high in Omega-6 fatty acids which can be pro-inflammatory if consumed in large quantities and when your diet is not balanced by an equal amount of Omega-3 fatty acids found in oily fish like salmon and sardines, eggs and leafy greens. Basically, don’t gorge on buckets of nuts and seeds every day. The same goes for nut meals and flours such as almond meal.
